So could you get away with filing your taxes and simply stating that the income came from illegal activities, without specifying what said activities were? Technically that isn't admitting to a crime, but you never declared what crime you did, and if they manage to convict you of your crime, they could not also convict you of tax evasion.

The IRS doesn’t expect anybody to pay taxes on illegal earnings, nor to even catch anybody for not doing so. They just want to make sure that these people, once caught by other means and for other crimes, can also be charged with tax evasion.

In tax accounting we had close to a full day on just accounting for bribes, because (iirc) bribes are taxed differently depending on their situation, if bribes are part of doing business then they can be a write off while if they arent then you cant write that off. Its been a few years and this hasnt come up un my professional life so i could be wrong but i just love how detailed bribes are taxed.

Until some years ago, maybe a decade, you could deduct tools you needed for your crimes (think of crowbars for burglars, for example) as business expenses from your income tax in the Netherlands.

As a US citizen abroad, I have to use the same forms to report my "foreign earned income". I've never lived in the USA in my life. It's a little odd. Oh, and fun fact - you also have to report money earned from war profiteering.
