Making a sandwich is one of the easiest things in food industry. Learning some tips from a deli will instantly improve at home sandwiches. Personally I prefer cold cuts that are nearly shredded. Thicker cuts are not my favorite. At a deli they give the illusion of more meat by crumbling the cold cuts a little instead of layering it completely flat. Another tip is first add mayo to the top bread, then shredded lettuce, then a dressing on top of the lettuce. Helps the dressing not spill to the sides on the table much. Then add onion slices, tomato slices and salt+pepper the tomatoes. At a deli I saw they take the cold cuts from the meat slicer and layer it on wax paper, then take that paper and slap it on top of the sandwich with the toppings. Makes the process more efficient.

Fats(butter, oil, etc) , layering (don't just slap down peices of meat and cheese, use half the pack, for another step up fold the meat in half as you put it down), fresh veg, and seasoning.

I used to work at a corner spot deli in the late 2000s and I promise you it's much simpler than this video. The key is to use a fresh hero roll of any size and freshly washed sliced lettuce, and to slice the lettuce thinly as you can. The moisture from the freshly sliced, freshly washed lettuce amplifies the flavor from your mayo or dressing giving you that distinct NY deli sandwich flavor. And you have to be sure the meat touches the bread with the mayo or dressing on it. And finally at the deli counter we use parchment paper sometimes both wax paper as well, but it's really up to you.

Better question, why do you all insist on giving Wawa's a shout out for subs. They suck big donkey balls. We got a Wawa's near me about 3 years ago. I was so excited because I heard so much great stuff about the. Bull crap. I can get a better Italian sub form my local Food Lion. The bread is dry and stale, the toppings were watery and had no flavor and the meats tasted like they came from a dollar store. The steak subs there are dry and the steak has a off taste to it. I will admit that the meatball subs are passable and if I had to eat as Wawa's, that is what I'd order. If I had a choice though, it's eat anywhere else first.

@tutacatI make Italian hoagies for family gatherings, they're always a hit. The rolls are important, I don't usually have time to make 20 sub rolls, but there's good brands out there, and also important to freshen them up first by dampening the exterior of the roll and putting them in a very hot oven for about 5-10 minutes. Olive oil is the key to moistening the roll prior to assembly, never mayo, you can also sprinkle the roll with red wine vinegar as well, but only if the sub will be eaten right away, otherwise if they're wrapped and stored in the fridg the red wine vinegar will make for soggy rolls, and so will tomatoes, for those slice them and lay on paper towels to absorb the moisture first. Also sprinkle on top the olive oil dried oregano and pepper, salt isn't necessary since deli meats are already pretty salty. Then layer using mortadella, genoa salami, capocollo, ham, provolone or mozzarella slices, thinly sliced onions, tomatoes and shredded lettuce with more dried oregano sprinkled on top. And the most important condiment is hoagie spread, which is minced up hot cherry peppers, Cento brand is most popular. You can spread it directly on the roll, or spread it somewhere in between. Italian hoagies do also taste best if they're wrapped and put in the fridge for at least 30 minutes, but improve even over a day or two, as the flavors meld.
@MG-ot2yrThis is part of what really leveled up my culinary skill from having a couple recipies I know well to being able to make almost anything taste decent at the end. It got me thinking of how flavors get to the end product instead of just using ingredients.
@NullRexI respect that you made your own bread and I agree with most of the things mentioned in the video, such as the bread being the most important part of a sandwich, crafting it with quality ingredients, crafting it thoughtfully, the concept of less is more. However, some things that you missed in the video are making the sandwich with the roasted vegetables or just heating up the sandwich all together (I prefer that), and also each people's tastes are different; you may like your sandwich made one way and crafted like you said with no tomatoes in the middle, but some people may prefer it being done a different way, with a different order of ingredients. The most important thing in making food is creativity and versatility!
In conclusion, this was a great video, you are an underrated channel and I hope you get more subscribers and views because you definitely deserve them, and you are a hard-working, honest, and great human being. PRO TIP : ethans sandwich looks great, but try catfood instead of meats. in my experience it really makes the sandwich pop, then sniff some glue and take a nice long nap
