Burnt Garlic Veg Noodle Soup

Sort of thukpa recipe for monsoon, it is so so comforting in rains and winters😊
Ingredients:
CARROT | गाजर 1 MEDIUM SIZED

FRENCH BEANS | फ्रेंच बीन्स 8–10 NOS.
SPRING ONION | हरा प्याज़ 2–3 NOS.

SHIMEJI MUSHROOM | शिमेजी मशरूम 125 GRAMS
BIRDS EYE CHILLI | बर्ड्स आई मिर्च 4–5 NOS.

GARLIC | लहसुन 70 GRAMS

Method:
Slice the carrot into thin planks, then cut into thin matchsticks (juliennes).
So tempting, what can we use instead of veg stock cube
Trim the ends of the French beans and slice them diagonally into thin pieces.
Chop the white stems of the spring onions finely. Cut part of the green tops into 2-inch lengths (for the soup) and chop the rest finely (for garnish).

Trim the base of the shimeji mushrooms so the individual pieces separate cleanly.
Slit the bird's eye chillies. If you prefer less heat, use 1–2 regular green chillies instead.

Slice the paneer (or tofu) into thin, long strips.
Chop the garlic finely using a chopper.

Heat 1–2 tbsp oil in a wok or deep pan over medium heat.
Add the chopped garlic and cook, stirring continuously, until it turns a deep golden brown.

Immediately add the spring onion whites and split chilies to stop the garlic from burning. Stir briefly for 10–15 seconds.
Pour in 1.5 liters of hot water.
Sir, it will more tasty if you add fried onion but after fried keep separate than before you eat add it on to your soup bowl also litlebit tomatoes ketchup.
Add the vegetable stock cube, light soy sauce, and white vinegar, white pepper powder, sugar, salt. Stir well and bring the broth to a rolling boil.
Drop the julienned carrots, French beans, and 100g noodles into the boiling broth.
I expected less noodles, as this is primarily a soup!
Can you please show the colorful soups they make in South Asian countries or in China? They have very attractive arrangement on top.

Cook on medium-high heat for 3–4 minutes until the noodles begin to soften but still hold a bite.
Add the mushrooms and paneer/tofu strips. Continue simmering for another 2–3 minutes.

Slowly pour in the cornstarch slurry while stirring continuously to give the broth a light, silky body without making it overly thick.
Simmer for 2–3 minutes until all ingredients are fully cooked.

Taste and adjust seasoning with salt or pepper if needed.
Toss in the 2-inch spring onion green strips and stir once. Turn off the heat.
You can add jowar atta instead of corn flour...
Ladle the hot noodle soup into serving bowls.
Garnish with finely chopped spring onion greens and a drizzle of chili oil if desired. Serve piping hot!

@suchandrapayal2078I absolutely love all your recipes. They always taste like restaurant style food. However, I just wish that you gave salt measurements instead of “salt to taste”. I don’t mean wrong, you can taste and adjust it but sometimes we don’t taste the food like the batters/dough/raw food or when we are fasting or someone who really doesn’t know how to cook and eyeball it. Other than that, I love your content! It makes me wanna cook even on lazy days. 😊
