Method:

Slice the carrot into thin planks, then cut into thin matchsticks (juliennes).

Trim the ends of the French beans and slice them diagonally into thin pieces.

Chop the white stems of the spring onions finely. Cut part of the green tops into 2-inch lengths (for the soup) and chop the rest finely (for garnish).

Trim the base of the shimeji mushrooms so the individual pieces separate cleanly.

Cook on medium-high heat for 3–4 minutes until the noodles begin to soften but still hold a bite.

Add the mushrooms and paneer/tofu strips. Continue simmering for another 2–3 minutes.

My husband is a longtime fan of yours and loves all your recipes. He’s also created way too many of them at home, that at this point it’s a household recipe now.
But he never fails to give you credit. It’s always “But Sanjyot Kher does this…” and “Sanjyot Kher says this…”.
According to him, the best part of your videos is the detailing.

I absolutely love all your recipes. They always taste like restaurant style food. However, I just wish that you gave salt measurements instead of “salt to taste”. I don’t mean wrong, you can taste and adjust it but sometimes we don’t taste the food like the batters/dough/raw food or when we are fasting or someone who really doesn’t know how to cook and eyeball it. Other than that, I love your content! It makes me wanna cook even on lazy days. 😊
