I started off smoking my St. Louis ribs at 225 degrees but never had much luck at that temperature. Then I watched an Aaron Franklin video on how he cooks his St. Louis ribs and he recommends 275 degrees. I switched to that and I much prefer that temperature as I think the ribs turn out much more tender and with good bark. You do need to make sure you remove them at the right time and not overcook them.

Does anyone have any idea how to make great tasting ribs without having to coat the hell out of them with sweet sauce, and honey, and sugar, & etc etc?

I can't stand really sweet ribs so I guess I'll just have to find my own techniques??

So, pull at 160'ish / wrap (but for no longer than an hour to an hour and a half) .. BUT .. wait till they reach 200 to 206 internal, then unwrap .. !! .. I am confused !

Lmao so.. instead of smoking unwrapped for 3 hours, wrap for 2 hours, unwrap for 1... You're saying to smoke for 5 hours... Then wrapped for 1.5 hours... 🫤 This is literally worse than the 3-2-1 method in every way

I've found with baby backs it's more 2-1-1. Even the wrap for an hour can be too much. The initial 2 hours is more than enough to impart smoke on a baby back.

Always, always, always remove the membrane. Just complete laziness not removing it. Membrane may render (debatable) but it blocks smoke and seasoning. How to cook ribs (offset, direct, vertical, pellet, etc.) is nowhere near as important as the prep.

Born and raised in the deep Southeast. No one No where wants anything but fall off the bone ribs. Its cultural and the pure truth is the absolute best way to cook Anything is the way you enjoy them!

Nope, rather have fall off the bone! I'll stick with my 3-2-1 method. That's the funny thing though. We can do our ribs how we want! Have fun with how you want to do it, and I'll keep doing it how I want (much better tastier way in my opinion!)

This is the only way I do my ribs. It's simple, and the end product is amazing! I did do a small variant though for the butter pads I used country crock squeeze butter, and instead of honey I did a generous drizzle of blue hog raspberry Chipotle BBQ sauce. I did this on accident because I was out of honey. The end result was even better. I guess that's why we smoke meats...trial and error. Love your video! It was a huge help starting off as a new smoker.

Thanks so much, fabulous method!!! Just used this to make my very first ribs on a pellet grill and they came out *divine*. Thank you! (Did 3 racks of baby back in a Traeger Ridgeline XL, took 3 hours to get to 160/your recommended appearance with super smoke on, 1.5-2 hours each to get to finish at 202-206 degrees.)

I used the 321 method on my Traeger and they come out perfect every time. Exactly the texture as in this video. Not falling off the bone. The key is not to use too much liquid for the texas crutch part. This method show here seems to take ever more time if smoking for 3-5 hours and then wrapping for another hour. I do Super Smoke at 185 for 3, then wrap the ribs for 2 hours at 225 and finish for 30-45 mins unwrapped with a bit extra sauce to get that lovely finish on them.

I spritz mine with Fireball Apple. You do not get any cinnamon flavor but a very sweet and tart apple flavor.

My method is pretty close to this. I use a smoke tube and run it at 225 for an hour. Then 250 to an internal temp of about 170. Wrap in butter, honey, brown sugar, and a splash of Dr Pepper. Probe tender or about 205. My family likes em sweet. Only takes about 3 1/2 hours. Great videos. I’m a subscriber now. Thanks. Teach me how to make a decent chicken breast on a pellet grill. I struggle.

225 degrees is a perfect temp to smoke. A lot of people complain about the pellet grill not producing enough smoke but trying to smoke ribs on a 300 degree temp. That’s not smoking. That’s cooking. 😂😂😂 it’s called low and slow for a reason but that’s my preference to smoke at 225

What if I do want "slide off the bone" ribs? My grandmother has trouble biting into things, and at 91 years old, I think I'd want a much more tender, easier to eat rib than this.

Followed this plan because 321 kept finishing way too early, and what do you know, these things finished 2 hours early. I think my green mountain temp guage is effed up... things are constantly finishing early. Time to get a traeger i guess. They look really good though!
