This recipe can satisfy a number of meal occasions. It's quick and easy so you can prepare it for a weeknight dinner. Yet it's also perfect for casual entertaining as it is packed with flavor and a touch of heat from the Italian herbs and crushed red pepper. Use jumbo shrimp if you want to make it impressive!

4 oz. large shrimp
Pappardelle pasta
We found this recipe a few years ago and come back to it every so often. Last time we made it was a couple of years ago, weโre back to watch and make it again ๐ซถ๐ฝ๐ซถ๐ฝ๐ซถ๐ฝ๐ฉ๐๐๐๐
1 tbsp. chicken bouillon
1 tbsp. oil
Ingredients (Metric Measurements
* Pasta (Pappardelle or choice): 250g
* Shrimp (Peeled & deveined): 450g
* Butter: 56g total (divided into two 28g portions)
* Oil: 28ml total (divided into two 14ml portions)
* Chicken Bouillon/Broth: 15g (1 tbsp) for pasta water
* Yellow Onion: 75g (approx. half a medium onion, diced)
* Minced Garlic: 8g (approx. 2 cloves)
* Tomato Paste: 45gโ60g (2โ3 tbsp)
* Heavy Cream: 240ml (1 cup)
* Parmesan Cheese: 50g (freshly shredded is best)
* Fresh Spinach: 30g (one large handful)
* Reserved Pasta Water: 120ml (save this before draining the pasta)
* Lemon Juice: 15ml (juice of half a lemon)
* Seasonings: To taste (Paprika, Italian seasoning, Onion/Garlic powder, Cayenne, Cajun seasoning(Smoked paprika + garlic powder + onion powder + black pepper), Red pepper flakes, Salt, and Pepper).
Quick Expert Cooking Guide
* Prep the Pasta: Boil your 250g of pasta in water seasoned with 15g of chicken bouillon. CRITICAL: Before you drain it, scoop out 120ml of that starchy water.
* The Shrimp: Season your 450g of shrimp with 14ml oil and your spice blend. Sear in 28g of butter for exactly 1 minute per sideโdon't let them get rubbery!
* The Base: In the same pan, melt the remaining 28g of butter. Sautรฉ the 75g of onion until soft, then add the 8g of garlic.
* Develop Flavor: Add the 45g of tomato paste and the remaining 14ml of oil. Fry this for 3 minutes to remove the "tinny" raw taste.
* The Sauce: Stir in your spices, lemon juice, the 120ml of reserved pasta water, and the 30g of spinach. Pour in the 240ml of heavy cream and 50g of Parmesan.
* Finish: Toss the cooked pasta into the sauce and fold the shrimp (and any juices from the plate) back in.

I made this yesterday. OMG!!! This was delicious!!! I did add mushrooms, red bell pepper and fresh parsley. It was AMAZING!!! Thank you for this recipe. It was perfect!

I made it. It tasted very good the lemon gives it a nice taste. A tip: best to use tomato paste rather than fresh tomato puree. Also, always exaggerate on the heavy cream side. More sauce is better than less sauce

Production Tech:
Great recipe Iโd suggest lowering your heat a little bit when searing the shrimp and adding the butter at the beginning. If itโs too hot the butter will burn thatโs the brown buildup. It doesnโt change the taste very much but will make cleanup much easier

OMG! In my heaven, that is what my fond will look like every time I cook. When you removed the shrimp, I just stared at that pan thinking you could cook shoe leather now and it would be five star.
