Cheesecakes crack because they start shrinking as soon as you take them out of the oven. Since the sides of it are adhered to the pan, it cracks as it shrinks. Just run a knife around the edge of the pan to release it. Ta-dah!

@EHDROCKJohn my biggest hesitation to do sourdough starter is the feeling that I have to feed it or use it when I don’t want to and or waste it just to keep it. So I would love to know where I’m wrong or how to manage it with feeling pressure to bake.
