Tips from her video

Remember she plus 3/4 cups more sheavy cream OR hot water. Not both.

Resting is very important. If when you roll it it pulls back rest longer. At least 20 minutes. This may help you. That's what I have learned. Press your finger in it and if the indent stays then rest longer.



Don't add extra flour

The comal MUST be heated hot enough.

Test one. If it doesn't start to bubble up in 30 to 45 seconds heat longer or turn up heat.

Hi Claudia, love your recipe! I've tried it and it makes perfect roti's.
Indians call this roti. Indians make it with boiling water, salt and the fat of choice could be either oil or butter or ghee.
Your recipe with cream works just as well.

These tortillas are indeed soft and flavorful! We followed the instructions making a very small batch, used the stand mixer but still ended up kneading with oiled hands on a greased surface. Will make these again, butter on warm tortillas is divine!!!

Im wondering about the ingredient amounts listed in the description. it seems like this is a 125% hydration dough? wouldn't that be like a batter? I get that heavy cream isn't 100% water, but it still seems crazy high. Am I missing something?

Made these with the heavy cream-- very good-- but also found a recipe to make your own heavy cream using warm milk and butter blended with an emersion blender. They were soft pliable bubbly puffy. Still cannot make perfectly round though. Any hints. Have seen flour tortilla pressers too-- are they worth it? Saw one brand that was almost 100 bucks! The tortillas did look perfectly round though.

This is similar to biscuits made with heavy cream. ❤ I do heat the cream until very warm (almost hot) It distributes the fat and helps the whole tortilla stay pliable. Also keep hot water on hand to add when the dough seems too dry.
