βΆοΈ RICE AND BEANS RECIPE INGREDIENTS: (4 SERVINGS approx.)
Wee tip to get the most from your blender. Put just enough water (or stock or whatever liquid) in and put it on a clean cycle (or just whizz it for a few seconds) and viola! youβll get every bit of whatever you were making (itβs just like rinsing tinned tomatoes can to get every bit of sauce)π
π For Vegetable Puree: (This makes 2+3/4 cups of puree)
25g / 5 to 6 Garlic Cloves
This looks amazing. I will try it soon, but replace basmati rice with quinoa.
10g / 1 inch Ginger
200g / 1 Red Bell Pepper

1 Cup / 200g SELLA WHITE BASMATI RICE (Rinsed thoroughly with water)
2 Cups / 1 Can (540ml Can) COOKED Black Beans (drained/rinsed) - I have used low sodium beans

I hate the smarmy music and go straight to the printed recipe. I like coconut oil with rice ,gives it a nice flavor. If you are using coconut milk why not use coconut oil too.

Nice. I would of roasted the bell peppers and tomatoes in oven. My preference and use green onion at end.
1/4 to 1/2 cup / 10g to 25g Cilantro (Coriander leaves) or to taste - chopped (OPTIONAL)
1/2 Teaspoon Freshly Ground Black pepper or to taste

Thoroughly wash the rice - a few times until the water runs clear. Drain 2 cups or 1 can of black beans. Let the rice and beans sit in the strainer to drain any excess water.
So happy you do not use words like "amazing" "wok skills" "incredible must see", love your presentation!! The only thing I will never use is olive oil, everything which is touched by this oil becomes an olive. Cold plates prefect.
π For vegetable puree: Chop the tomatoes, red bell pepper, ginger and garlic. Then blend to a smooth puree. This makes approximately 2+3/4 cups of puree.
π USE A WIDER POT TO COOK THIS DISH, that way the rice will cook more evenly without getting mushy).
I added baked squash and fresh zucchini to the blender as well and the end result was a crowd pleaser.

To a heated pot add olive oil, onion, 1/4 teaspoon salt and fry on medium heat until the onions are browned. It takes about 7 to 8 minutes while switching between medium and medium-high heat. Adding salt to onions will release it's moisture and help it cook faster, so donβt skip it.
Once the onion is browned, reduce the heat to low and add the spices - dried thyme, paprika ground coriander, cumin, all-spice, cayenne and fry for a few seconds. Then add the vegetable puree, black beans, salt (to taste) and mix well. Increase the heat, cover the pan and bring to a vigorous boil. Once it starts to boil, reduce the heat to medium-low, cover and cook on medium-low heat for about 8 minutes.
Another boring, contrived video with gentle music to keep you hooked so you can watch the borring contrived ads to make them more money.
Uncover the pan and add the basmati rice and coconut milk. Mix thoroughly and bring to a boil. Then reduce the heat to low. Cook the rice on low heat for 10 to 15 minutes or until the rice is cooked but not mushy. IT TOOK ME 10 MINUTES ON MY STOVE. Once cooked, turn off the heat. Add chopped cilantro and black pepper. Mix very gently because rice is very soft at this point and over mixing can cause the rice grains to break. Cover and let it rest for 4 to 5 minutes. Serve with your favourite sides. This recipe is perfect for meal planning and can be stored in the refrigerator for 3 to 4 days.
β π THE COOKING TIME DEPENDS ON THE QUALITY OF THE RICE SO ADJUST ACCORDINGLY. It took me 10 minutes on my stove.

I doubled the recipe with ambition to freeze portions for lunches. Unfortunately using the measurements isn't yielding favorable results. I must admit I only had long grain brown rice to use but I can't imagine that would be the reason I've ended up with a soupy result.

@ajr2032First let me say that I love your recipes FoodImpromptu! With that said, I made a few swaps on this dish that others might be interested in. I swapped quinoa for the rice, and chickpeas (2 cans) for the black beans. I pan fried the chickpeas with olive oil and garlic salt, and added them at the very end. The end result was very good, but I had a Ratatouille moment and decided to add a 20 oz can of crushed pineapple. The end result was total fire (my daughter's words)... sooo good! I will say that it was a little on the extra extra moist side of things. Next time, I will increase the quinoa to 1 +1/4 cup, and drop fresh tomatoes by 50g.
