This is a more simplified and less complicated (believe it or not) version. With that said, I know this is still something that seems pretty time consuming, but you have to remember that the majority of the time is completely inactive, so it's really not. It just requires a little patience. You know what though? That's what bread is all about. Bread is such a meditational process to me. You're not worrying about your job, you're not stressing about finances, you're just completely focused on one thing. The bread. Hope you guys at least give it the chance to try it!

I did everything to a T (twice) and cant get my dough to look or feel like the preshaped balls. Just turns into a puddle. And when I bake it its still just a flat solid disk. Wasted so much time for nothing. No idea what I did wrong.

I always come back to this video when I’ve taken a break from looking after my starter or making sourdough bread. It reassures me that I’m doing the right thing. My bread keeps coming out like a brick, I told my Dad I ferment for 15 hours in the fridge and he said I was crazy for thinking that would work. This time, I put it in the oven with the light on over night then put them in the fridge for the rest of the time. One turned into a brick, this next one looks fine. I did fold this last one a bit. I will use parchment paper on the next one.

3:15 Bulk fermentation begins, peforming 2 folds spaced 15 minutes apart, and then one last fold spaced by 30 minuters after the 2nd fold. Totaling at 3 folds. Allow dough to rest for remainder of bulk fermentation.

7:00P.M. Preshape your loaves.

All the mixture stuck to the bowl, good thing it's mixed to the exact gram

7:25 P.M. Shape your loaves and place them in their proofing baskets. Place them in plastic bags to prevent drying out, and proof them overnight in the fridge for 14-15 hours.

(the next day)9:00 A.M. Preheat oven with your dutch ovens in their from cold, to get them super hot, for one hour.

Hey, followed this as closely as I could and when i came to preshape, the dough was so wet I couldn't do anything with it, as soon as I touched anything it stuck and then tore. It looked nothing like his and I don't know what i did wrong! Any suggestions?

Hiii I’m not sure if anyone can help me. I’d like to make this bread but I only have a small 4qt Dutch oven. I was planning on cutting the recipe in half to make small loaves but does anyone have any idea how much I should decrease baking time? Half it as well or how can I physically know when it’s ready?

Rookie sourdough baker here! I’ve tried it three times, but each time the dough is sooooo watery that it flops like lotion. When I preshape, it stretches out so much that it’s almost flat. What am I doing wrong here😢😢

This is not a super beginner sourdough recipe. If this is your first time, ensure you have a very robust starter and have a fermentation station if you are to follow this recipe. I tried his sourdough starter recipe to make my starter which did turn out to be active but she was not active enough to bulk ferment my dough for this recipe. 

My first attempt at this recipe was unsucessful as I did not want to go out to buy a fermentation station so I used the oven with a light on instead.

ALTERNATIVE: I found a very easy recipe that uses a starter right from the fridge. It honestly only required 10 min of work but did cold ferment for 24 hours on my counter using 2 visual methods (plastic bag or small vial) to ensure it had doubled in size before forming and rise before baking. Ben Starr gives an hour long video to describe the process in great detail. 10 min of that video shows you a step by step on the super easy beginner sourdough recipe that yields a decent loaf. However, he does bold that his recipe does not involve folding the dough a bunch of times because his goal is a decent loaf with no big aesthetic grandeur holes in it.
