Ina Garten makes a similar roast chicken in a video that was posted about 16 years ago and this one. Same ingredients except in the older one she brushes butter instead of olive oil. Anyone know why she changed to olive oil? Ina? Gonna make this soon and curious what the difference in the result might be. Thanks!

So much of fine food is about the ingredients. Of course we never get to taste what we see on YouTube and we never learn why restaurant food is so much better than home cooked food. I wish these cooks (and sometimes chefs - A cook follows a recipe, A Chef invents a recipe) would discuss the ingredients more. I have no doubt that a free range chicken of a specific breed such as a Bress (American or French) would taste better and is what a fine restaurant uses, but these videos never address what is one of the most important parts of great food. Help us out here! Talk about the best ingredients.

Ingredients
1 (4 to 5 pound) roasting chicken
This was the recipe I used the first time I cooked for my bf. He said “welp there goes the Corvette fund” and decided then he needed to start a wedding ring fund 😂 We’ve been together ever since then for 8 years and been married for 2 ❤
Kosher salt and freshly ground black pepper
2 lemons

1 whole head garlic, cut in 1/2 crosswise
Good olive oil
Beautiful
2 Spanish onions, peeled and thickly sliced
1/2 cup dry white wine
She is such a joy to watch
1/2 cup chicken stock, preferably homemade
1 tablespoon all-purpose flour

Directions
Preheat the oven to 425 degrees F.
Remove and discard the chicken giblets. Pat the outside dry. Liberally salt and pepper the inside of the chicken. Cut the lemons in quarters, place 2 quarters in the chicken along with the garlic and reserve the rest of the lemons. Brush the outside of the chicken with olive oil and sprinkle the chicken liberally with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the chicken in a small (11 by 14-inch) roasting pan. (If the pan is too large, the onions will burn.) Place the reserved lemons and the sliced onions in a large bowl and toss with 2 tablespoons of olive oil, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Pour the mixture around the chicken in the pan.
Roast the chicken for about 1 hour and 15 minutes, until the juices run clear when you cut between a leg and a thigh. Remove the chicken to a platter, cover with aluminum foil, and allow to rest for 10 minutes while you prepare the sauce, leaving the lemons and onions in the pan.

Place the pan on top of the stove and turn the heat to medium-high. Add the wine and stir with a wooden spoon to scrape up the brown bits. Add the stock and sprinkle on the flour, stirring constantly for a minute, until the sauce thickens. Add any juices that collect under the chicken. Carve the chicken onto a platter and serve with the lemons, onions, and warm sauce.

Made this a week and a half ago. Forgot the olive oil. But it turned out “great” in my folks’ & aunt’s eye! I’m disappointed how MY chicken didn’t have the zest garlic taste I wanted but it was juicy! I blame myself for not being good as Ina!

I miss my late mom's cooking, she knew how to roast a perfect chicken. I could do it myself, but my oven dosn't work and i can't afford a new oven. So just frozen ready meals in the microwave for me. I so miss my mom's home cooking

I dont know why these cooks say that onions are sweet. Ive been eating onions for years. None of them are sweet to me . Some desserts maybe but not onions.

@earlunifiedDelightful taste and sensible cooking, brushing lightly with oil makes a crisp golden skin and it doesn't burn and stink like butter does. The chicken is moist. The veggies, herbs and juices make a great gravy. Perfect chicken.
