How is it that every steak video I watch cooks the exact same way except some sear 1 min each and some sear 3 or 4 mins each side and all get medium rare? All on cast iron, all butter baste, all medium-high heat. I just don't get it.

I have 0 cooking experience. Just sent the house up in smoke with barely any pink to be seen in my steak.
My steak was generously an inch thick, which might’ve been my problem from the beginning with his method.
I let it sit out for 20 min before blotting it dry and putting a bunch of sea salt and some black pepper on it. I had the stove at 6-7 out of 9 and had olive oil on it for a while (which I think might’ve caused all the smoke and the steak to burn pretty quickly 🤷‍♂️). By the time I put the steak on the oil was already getting a darker color. I only cooked the first side for 2 min and then cooked the second side for maybe 1:30. I put the butter 4 tbsps on right away on accident on the second side. I let it sit out for 7ish minutes before cutting. The fat tasted great because of all the salt I put on it, but the steak was pretty overcooked.

Why can’t we use temp ranges instead of “medium high” heat? You the man so no shade of course but all types of ovens oils and pans heat at different rates. It’d be great to see “drop steak when pan/oil reaches “x” degrees.
