It's not called Victoria "sponge" cake. It's Victoria Sandwich or sometimes people might say Victoria Cake. But never Victoria "sponge" Also, it takes half butter half margarine. And the traditional one doesn't have whipping cream, just raspberry jam

There is an allowable amount of spider legs in our jam. A miniscule bit of egg shell isn't worth the hunt. lol

If I were to make it the day before to bring to work tomorrow, do you recommend putting the whip cream and strawberry the day before and keeping in the fridge overnight or set it up the next day. We have a Christmas bake-off each year and I would like to submit a “Bridgerton Spongecake” as my entry.

As with most of your recipes, this is another really good recipe. However, it’s important to note at least in the UK. It is never called a Victoria sponge. It is called a Victoria sandwich.

Looks great. But cream? It's common now, but traditionally it was only jam and a light dusting of icing sugar (powdered sugar). Especially true, back in Victorian times.

I've tried a cake once and absolutely loved how it tasted and I've been trying to find a recipe that can make it since then, always failed. Until I tried this! It is the exact same taste and everything. It came out so delicious, fluffy, light and just the perfect texture.
At first, my butter, sugar and egg mixture didn't beat well and wasnt smooth so I was scared and thought I failed, but it still came out amazing!

You're overthinking this. Victoria sponge does not require any mechanical/electric appliance interventions. think about it for a second. you just need decent ingredients.

4:35 If you switch to your whisk attachment and put the machine on a medium speed when adding the eggs, whisking well between each addition this curdling does not occur
