I'm making a version that's the same but you just add ketchup on top at the end and call it Eggs Benedict Arnold.

Make your sauce after you assemble the Benedict. Letting the sauce sit, risks it "splitting" a horror I've encountered. If that happens, wisk one yolk w/drop of hot water, then slowly drizzle in split sauce. It will come back together. ❤

Hello from Canada and Brazil! Thank you so much for sharing this recipe. I made it yesterday for Easter, and it turned out absolutely perfect! 🌟✨ I added a little twist by mixing in 1/8 teaspoon of salt to enhance the flavor, and I swapped the vanilla extract for 1 teaspoon of Kahlúa. ☕ I also dipped mine in chocolate -- delicious! 🍫😋

Followed the instructions but the sauce is runny as water.

After asking ChatGPT I've found you can double boil the sauce and that will fix it. Whisking while you do it.

You whisk the eggs in a glass bowl over a rolling boil (if you're using gas). You don't out hot butter into cold eggs - the sauce will split. You don't seaon the eggs at the beginning - the eggs won't take the fat of the butter. You put water or white wine vinegar in the egg yolks to start, not lemon juice. That comes at the end. That's a terrible way of doing Hollandaise.

I am in Perdido Key FL., and I heard that in late 1800s it was a good cure for a hangover, I am obsessed with the Bushwacker Cocktail. It has rum and popular in beach areas. You could do a few cocktail recipes. New Orleans invented the Hurricane. But Bushwacker is a beach favorite.
