I just made one this morning. It had 1 cup of maple syrup, 1 cup of buckwheat honey. 1 can of san marazano tomatoes, smoked paprika, a little dijon mustard, a little tobasco, some apple cider vingar, little dried garlic, black pepper, salt.. Blended on low in the blender and on the stove on low. First time trying to make my own!

High fructose corn syrup in ketchup is pretty much the same as the sugar version. The sugar molecules split up in acidic conditions into glucose and fructose. This is the reason why Mexican cola and American cola are basically the same.

why do you use garlic powder instead of fresh garlic? Powder seems to be common in bbq but never fresh garlic? Is there a reason

1/2 LB butter

1/2 yellow onion

- Cook to translucent

1 1/2 C ketchup

1/2 C apple cider vinegar

2 oz lightly packed light brown sugar

1 1/4 tsp kosher salt

1 1/4 tsp black pepper

3/4 tsp chili powder

3/4 tsp garlic powder

1/2 lemon juice

- Stir and cook down for 15 to 20 min

(I also blend with a hand blender after it’s cooked down - Best BBQ sauce I've ever had)

Echoing what others have said.. a little too tangy -- even after leaving out the lemon. Would recommend cutting the ACV by half OR adding more sugar. I added honey to help cut the ACV. Also, I don't think 1/2 lb of butter is necessary.

Now to make it an Austin BBQ sauce from the 1970’s add two cups of beef stock to thin it out. The point of the sauce is to “wet” a dry piece of meat, not to mask the taste of the meat.

Don’t know what I did wrong but it’s orange and after sitting in the fridge a few hours it thickened like crazy. Tastes good though.

Recipe:
1/2 lb butter
1/2 yellow onion
1 1/2 cup ketchup (no HFCS)
1/2 cup apple cider vinegar
2 oz lightly packed light brown sugar
~1 tsp kosher salt
~1 tsp black pepper
<1 tsp chili powder
<1 tsp garlic powder
1/2 lemon juice


I saw another video where he uses and immersion blender at the end, so that's what I do and it's great.

1 and 1/2 cup of ketchup
1/2 cup apple cider vinegar
2 oz light brown sugar
Teaspoon salt
Teaspoon black pepper
Teaspoon chili powder
Teaspoon garlic powder
Half lemon
Simmer for little bit

Edit: found sauce to be too tangy. I would cut down the vinegar and lemon by half.

I followed the recipe and it has a great tang. The onion I used was pretty big it is more noticeable in the sauce. What would be the best way to fix this? Add more of everything else?

Hey Sir.. I do just about the same but use fresh garlic and one or two hot chili's peppers, cook then run in a vitamix on high speed for 5 to 7 minutes, cool and jar it up.
It comes out with no chunks, just a nice smooth sauce.
