Hi James, if you want to read more about the Jewish influence on Spanish cuisine (like in the cocido) I recommend the excellent book by Claudia Roden "The Food of Spain". She describes the many Jewish remnants in Spanish dishes and it is my go-to Spanish cook book.

When I moved to Madrid, I fell in love with two things - the history and the food. And over the years I’ve loved spending time in places that combine both… taverns & restaurants that are absolutely dripping with history and atmosphere. In this video, Yoly and I take you to 5 of my favourite historic restaurants and tapas bars… and not only do we eat the food, but also I tell you the stories behind these remarkable places that we’re so lucky to have on our doorstep!

That cook at El sobrino de Botín is a super nice guy from the 🇵🇭 I think his name was Roel or something like that. From what I recall he’s been THE guy since 2003 ish

1. First we visit Taberna Antonio Sánchez, which is actually the oldest still-running tavern in the city (not to be confused with Botin, which is the oldest still running restaurant in the world). This place has the most remarkable decor that hasn’t changed since the 1830s. And downstairs is a fascinating hidden wine cellar.
Enjoy eating small, sweet animals, James? Disgusting. Go vegetarian already.
2. Then we head into Madrid’s Literary Quarter to Casa Alberto. These are the streets Miguel de Cervantes’ famous author of Don Quixote lived in. And they’re wonderful to wander. Casa Alberto is always heaving, and it’s perfect for a quick vermouth, or something a little more substantial… like the bull tail stew we order.
3. Next up it’s Taberna La Bola, where we get a special behind-the-scenes visit to the kitchen, where they make their famous cocido madrileño stew the old fashioned way - in clay pots and on a charcoal stove. It’s a huge feast, but it’s worth it!
I saw the video and had to make a reservation at Botin for when I visit Madrid around New Year’s 🤗 I need to taste that crackling pork!
4. Casa Ciriaco is part bar, part restaurant… and it’s always heaving. I love hanging out in the tapas bar area and sipping on wine, or heading through to the restaurant where it just screams old Madrid with its photos of famous guests.
5. The grande finale! Restaurant Botín… aka Sobrino de Botín. We see the 300-year-old oven, explore the four magical floors and then sit down in Hemingway’s table for a plate of incredible roast suckling pig. A once-in-a-lifetime experience!
I think that "prohibido cantar y bailar" is for flamenco music, in Sevilla the oldest bar have a similar sign.....

Interestingly, cocido looks very similar to an old Persian dish called Dizi, even the clay pot used looks similar. Dizi has Lamb, Lamb Fat, Chick Peas (Garbanzo), Potatoes, and Tomatoes.

Unfortunately, I have to disappoint you about the thesis that Botin is the oldest restaurant still operating in the world. There are a few older ones, e.g. under the historic bridge in Regensburg (Germany) "Historische Wurstküche", originally a kitchen for the bridge builders (in the 12th century) and now a traditional restaurant or "Piwnica Świdnicka" in the town hall in Wrocław (formerly Breslau) in Poland - from thirteenth century.

@emK605We just got back from two weeks in Madrid a couple days ago and this restaurant was one of the first ones we went to after watching this video we were so excited to eat here. We wanted to try the suckling pig. At first they were nice and got us a table right when they opened even without a reservation we only had to wait about 10 minutes. Once we were sat the waiter was not so nice. We were under the full impression ordering this pig that we were going to get the whole suckling pig brought out on the pan like you see in the video. We were extremely disappointed when they brought out a plate with just a piece of the Pig on it. They told us that is what you get not the whole pig. This ruined our entire experience. On top of that it tasted horrible. I kid you not 80% of it was not even edible. It was bone and fat and whatever else and very little of it was actually meat that you could eat. The meat part that I did eat did not have much flavor and was just not good. I left still hungry and very unhappy with the whole experience. The restaurant itself is very cool but the food was horrible. I also ordered some other chicken dish that was okay but still not great. Almost every table around us also ordered the suckling pig and we overheard their conversations also complaining about it not being great and disappointed. If you want to eat at the oldest restaurant in the world it's cool for that but don't expect amazing food, especially the pig

Those made us remember our time in Bogota, Colombia, when younger in the streets of el barrio La Candelaria, founded by the first Spaniards in South America. E.g. La Puerta Falsa. Congrats!

@24wallachianVisited Madrid in 1968. Two eateries I remember are Botin and Jose Luis which served a 5 or six course meal and had unbelievable service.

@doloresperez2139Botin is not the oldest running restaurant in the world if it opened in1725. “Den Gyldene Freden” (The Golden Peace) in Stockholm opened in 1722 and is still open at the same address.
