When I used to work in kitchens and we made clarified butter, we'd microwave it in a deeper tub and, once melted, just slowly pour it into another dish - if you're reasonably careful, any solids on the top stay in place, and the solids at the bottom stay where they are too. It's better to use a more square/rectangular tub, and pour from the corner, but it's pretty easy to do. No need to chill it - you can use it then and there.

Mochi l餅米 literally just means glutinous rice. Many people just think it's the ice cream kind, which is actually closer to a "daifuku" 大福. Kiri-mochi literally means cut mochi 😅 It's really good roasted or fried! Especially cut in those cute shapes!

The problem I think with the last gadget is that it's only the metal surface that you really need from what's shown

I did a quick search online and you can get a stainless steel or cast iron plancha for 70-100 USD. E.g. if you have a decent stove (gas or induction or grill), would you need the underlying kit that heats this device. The latter piece seems like a waste of space and money

14:12 You put mochi sheets in hot pot and cook at the table so they will retain their shape and the fast cook time is important. You often do it in shabu shabu. In a noodle dish ("chikara" noodle dishes) you'll usually just cook the block whole.

10:51 these frothers are standard on Japanese kegs taps. You can get the same ultra-fine head by hand by pouring from higher up and letting it collapse, but you lose carbonation doing it that way.

Furikake on okonomiyaki? You want green laver and tempura scraps. Laver and pickled ginger are non-negotiable!

You can avoid the bonito drying and slicing by just smoking anchovies. Mr. Paik in SK perfected that recipe during covid era and SK doesnt need to import bonito anymore. 😉, saving $$$$$ avoiding import fees, and can export the smoked anchovy too $$$$ product too.

a balanced meal has at least 30% fat in it, but it looks like that egg pancake didnt. Can you explain how its balanced? proteins and carbs without fat make for terrible stomach problems and energy issues. Oh and dont advice olive oil: if the whole world transferred to olive oil we need to cut down the rainforest 50% faster to keep up. Actually palm oil is better for the enviroment but just because of the country of origin it gets a bad rep. If the countries that produce palm oil move to olive oil, there would be even less forest.Oh and protein isnt an energy delivery food. Its just marketing that make you believe its good. Maybe to sell eating bugs? who knows.

It seems that you need a specific slicer for everything in Japan!!
My kitchen cabinets would be overflowing with different types of slicers.
I'd have to have each of them labeled too so I could recall which slicer goes with which food.

6:18 My first time in London visiting from the US I was a bit upset that there was such a large head on my beer. I asked the bar tender if it were possible to take off the head and fill the difference with beer.

The answer was pretty clear: "No". That sensation of froth clinging to the lip.... shudder....!
