Okay, this scene is magic trick for viewer. You know what is the result, you don't know how it happened, it seems to be bizarre sleight of hand. How did Walty added ricin? Simple. He knew Lydia always drink with stevia and with more than 1 packet. He prepared beforehand, her favorite table, he took all stevia away except one. Now, when she arrived, he walked to NEARBY table to grab chair... but also to add stevia packet to that neighboring table with two women (he confidently betting they won't drink tea with this crap). Now, when he walked away, Lydia asked waiter for extra stevia. Where waiter goes? TO NEAREST TABLE and bring it to her OUTSIDE OF OUR VIEW, the first packet is MISDIRECTION for viewer, whole scene is magic trick that CONTROLS VIEWER'S ATTENTION while actual "magic" happens outside of attention focus.
