That's right folks... making healthy food at home can be cheap, easy, and obviously also beautifully delicious. The real goal here is just using some very basic technique and you'll have arguably one of the best feel-good homemade meals of your life.

I think the toast is doing a lot of work on the shakshuka having made it before. I’d rather just make eggs with a side of cooked vegetables or something. Cut out the crushed tomatoes which just overpower the rest of the dish.

2 tablespoons (30ml) rice vinegar

For people who want to eat kale but don't like it raw (idk man, I've never tried it any other way then cooked/boiled): here's a classic dutch recipe on the cheap (we call it boerenkool stamppot, idk what that would be in english tbh):

you need:
- about 400 grams (3 2/3 cups) of kale, roughly chopped (idk pieces of about 1-2 cm / 1/2-2 inches?) or just buy it chopped if they have it, way easier
- about 1 kg (2.2 pounds) of potatoes, preferably ones that are a littl crumbly when cooked. Chop them into large pieces (it really doesn't matter as much, we're gonna make them smaller anyways)
- some yoghurt/sour cream whatever you like, about half a cup ish? just a couple table spoons, whatever you like
- some mustard (about 1 tablespoon? who measures these things anyways?)
- some bacon bits (just any small chopped piece of salty pork, i think bacon is closest to what we have)
- some (smoked) sausage & gravy if you like that

boil the potatoes for about 20 minutes and add the kale for the last 10 (boil until fully cooked, but should be roughly this)
then get rid of the water and mash the potatoes and kale together (you want to keep some smaller chunks, don't think of it as a super fine mashed potatoe kinda thing)
add your yoghurt, mustard and bacon bits and mash/ mix those through
serve with the sausage & gravy
just leave out the meat if you want it veggie & change the yoghurt for something plant-based if you want it vegan
and please don't complain about the lack of seasoning

and it's pretty cheap, especially without the meat but also with. Great winter meal in my opinion
