Colonel sanders must be rolling in his grave seeing how most Kentucky fried chicken restaurants aren't what they once was. Kentucky fried chicken back in the day was absolutely amazing, mouth watering, and what southern fried chicken is supposed to be. Once a major food chain reaches a certain level it loses its quality, and becomes more about profit than what actually made the chain so popular back in the day. Same thing with places like dairy queen and McDonald's. To get top quality fried chicken you have to get it from the smaller businesses nowadays. Or find the neighborhood granny on the block that cooks it every Sunday. Lol

KFC uses a pressure fryer, making it their signature texture, it doent do the same as a regular fryer

Here's the thing. KFC is soft and tender. You can scour the net, Youtube and copycats can only make it crunchy. I know this was posted 4 years ago, but if you can, redo the cooking where the outcome is soft and tender.

You need a pressure cooker to make Kentucky Fried Chicken

I finally nailed my recipe, the key i found was ginger and push the flour into the skin

Always half fry it then place it on a rack to finish baking so it can have that original KFC chicken texture.

@klove5765Only eating chicken right out the fryer will it be crispy. Think about it their placed on a rack, excess grease dips off, and exposed to air staying dry until eaten.
Delivery/Pick-up the lid stays on the bucket, traps hot steam, moisture, and softening the crust until it gets to your home.

We would fry the chicken at 450 F for 11 mins in a pressure cooker..
Just wash the chicken and coat it in the flour provided..

I worked cutting 269 chickens at a time each into 9 pieces not 8 as is mentioned here..

I prefer to wash the bird first just saying
@johntremblay4100It’s better to cook the big pieces first because when you take them out of the oil, they will stay hot a lot longer than the little pieces will if you do them first. Plus, since the big pieces take longer to cook, they won’t cool off as quickly because the little pieces Will cook quicker while the big ones are waiting.
That’s not enough oil
When you dredge the flower initially, give it a little bit of a squeeze on the on the chicken to pack it ground and again when you re-dip it. If you wait 10 or 20 minutes before you cook out, you don’t have to worry about the crust falling off.
You would get a better product if you coded all of the chicken first just with the Flower until all of them are done, and then dip them and coat them again in the flower the reason for that is by the time you get to the last few pieces of chicken, the flower will have changed consistency a great deal from getting wetplus your fingers won’t be so messy
