1. Place butter into a pan over low heat and melt. Set aside.

2. In a medium bowl, combine flour, salt,sugar, baking soda, and baking powder. Whisk the dry ingredients until the salt and leaveners are evenly mixed throughout.

3. In a second bowl, combine buttermilk and eggs. Whisk until well blended. If you can’t find buttermilk, combine 500 grams (2 cups) of sour cream with 400 grams (1 2/3 cups) of water as a substitute.

4. Pour the buttermilk mixture into the dry ingredients and carefully fold to combine. Start with 10 gentle stirs.

Damn it. I've been trying this recipe with different flours and measures. I'm Portuguese and with Branca de Neve flour it really gets big because when it goes in the pan it doesn't expand that much and grow in size. But I live in Germany and I have a lot of options to choose from. Usually they have this 405 flour wich is lower in protein and I don't know the percentage of ash because I'm lazy and didn't actually tried to search that. However I'm trying to understand how to emulate that thickness from the Portuguese flour but had no success so far. Tried starch and now I'm thinking rice flour in a small percentage. I even got one more egg today so I could have some more protein but I think the gluten is not that much and before the 2 minutes a lot of air comes out because of the gluten structure that seem to dissipate. Do you have some kind of suggestion for this? I'm loosing my mind on why this happens.

5. Stream in half of the melted butter and fold gently. Then, add the remaining butter and fold for another 30 seconds. Be careful not to overmix the batter; it should remain lumpy.

6. Heat a griddle or non-stick pan to 350-375°F (175-190°C). Use a 4-ounce scoop or 1/2 cup of batter per pancake.

Brian, I thought you were crazy with this recipe. All that butter? No vanilla extract in sight? What?? But wow, this is absolutely the best pancake I've ever had in my life. Every component is perfect, and the buttermilk comes through so, sooooo deliciously. It's forever staying in my recipe box as Brian's Perfect Buttermilk Pancakes. Make no changes or substitutions, people. This recipe is it!

7. Drop the batter onto the preheated griddle or pan with a 4oz scoop or about a ½ cup measure and smooth it out into a round shape.

8. Cook for 2-3 minutes on the first side until golden brown. Flip and cook for another 2-3 minutes on the second side.

CHAPTERS:

Personally I'm usually fine with a single use item/tool/appliance. As the sayings go, the right tool for the right job or a jack of all trades and a master of none (yes, I'm aware of the second ones full quote...). However, at our house an electric griddle isn't a unitasker. It makes pancakes, french toast and more often, it heats tortillas.
I will be making these this weekend but will use your whipped butter when serving.

Thank you for the recipe but I didn't like it not even one bit the amount of butter is too much to the point this is the first dish ever that made me believe that too much butter sucks! The pancakes doesn't has structure its a melt in ur mouth feeling and not in a good way! also the amount we're making is too much so now I don't know what im gonna do with the rest, it's definitely for a big family or a small party not suitable for a family of two.

GOAT!! I've been making Ragusea's 101's - I think because of how sweetly he talks about his boys and letting them mix food coloring in. These are indeed BANGIN'!! Great tip with the sour cream + water!! I've been mixing half & half with white vinegar. But I happened to have some surplus sour cream in inventory, so, YEAH!! I was surprised there was no vanilla in there. I hadda add a splash just because my parents were looking down from heaven, I was making these for my supper, and that was a favorite growing up. These are easily the best pancakes ever, and I tried A LOT of different recipes, including from famous chefs.
Regarding the baking powder quantity - I use about 12-15g instead 25 and the results are fantastic (everything else is exactly as in the recipe).

My recipe is 12 pounds sugar and 6 pounds of honey. Then 2 cups flour, don't forget a half pound of salt. Then eat and wait for diabetes to show up... but seriously, don't you add sugar and butter on top? Do you really need some in your pancake?
