@luisquinones1300My only complaint is that your marinade recipe uses pre mixed spice such as WOW spice. It would be more informative if you were to actually make the marinade from scratch ingredients. But your results looked good.

@Sadie246I lived in Texas for several years and had fajitas several times. I always thought they were mesquite grilled but it sounds like youβre saying that even in Texas the restaurants cook them on a flat grill. Interesting. My favorite place used skirt steak and with their marinade they got it so tender you could cut it with a plastic spoon.

@SunnyinFloridaFor me the secret to making them over the top is to use cast iron. When I've used any kind of non-stick pan they get watery and almost boil, need cast iron to eliminate that. Keeps the veggies nice and firm and cooks fast.

Your techniques are true to the simplicity of freshness, tradition, and frankly just great Mexican cooking. Great cooking is not a recipe as you demonstrate. It's using ingredients, understanding the 'thing' going on, and letting it take it's glorious course. Tasting things, LOL, you really are a real cook.
