I made this with 3 tbsp Szechuan chilli peppers crushed to flakes and it tasted awful. Lesson learned - Szechuan pepper and Szechuan chilli are 2 different plants 🤦🏻‍♀️

I got cocky and added an extra tablespoon of chili flakes cuz i was like na this white guy spice tolerance is probably low ima add more big mistake I was sweating bullets while eating them but man they were great cheers Josh 🍻

The creamy sesame noodles are just like 热干面 or hot dry noodles, Wuhan's (second) most famous export ;) Instead of using the noodle cooking water/dashi, they use a spiced beef braising liquid. They also add different types of pickles to it. I'm not sure about other western countries, but in Australia roasted sesame paste is easily found in Asian supermarkets. An insanely addictive dish and the ingredients easily prepared ahead of time especially as it's traditionally a breakfast dish. For anyone who has a hard time mincing garlic, a microplane is better than a garlic press. I use mine for garlic, ginger, parm, nutmeg, lemon or lime zest, etc. so it gets PLENTY of use and it cleans up super easy.

Creamy Peanut butter
1/4 cup - Tahini
3 tbsp - creamy peanut butter
2 1/2 tbsp - soy sauce
1 tbsp - white still vinegar
1 tbsp - light brow sugar
1 tspn - mirin
3 cloves - Grate garlic
1 1/2 - 2 inch knob - ginger
1 tbsp - shiradashi
1 tbsp - chili crisp
1 lb - noodles
1/3 cup noodle water (or half of it)

I doubled the recipe because I had 2lbs. of noodles and boy is that a lot of tahini. I want to try the recipe as shown and see if it's as thick and chewy. I added soooo much pasta water too. But it was very gummy on the plate. The taste was great though.

Here is the written recipe for the Creamy Sesame Noodles. THEY ARE AMAZING. 11/10! My pantry subs are noted as well : )

1lb Fresh Egg Noodles

2 ½ TBSP Soy Sauce

¼ Cup Roasted Tahini

3 TBSP Creamy Peanut Butter

1 TBSP White Vinegar

1 TBSP Brown Sugar (sub palm sugar)

1 tsp Mirin (sub white wine)

1 TBSP Shiro Dashi (sub ½ tsp wonton soup powder)

1 TBSP Chili Crisp

3 Cloves Garlic, Grated

1 ½ inch Ginger, Grated

⅙ cup Pasta Water



Mix all ingredients. Cook egg noodles to package instructions. Combine.
