After you’re done cooking on your grill, turn your girl up to high clean it and walk away and is ready for the next time that’s BS to leave all that gunk on your grill. I’m a retiree. I was working at our local Ace Hardware. I was asked to deliver a new Weber Genesis three burner with a side burner and the manager said all they want you to take the other one and throw it away. No problem when I got up to the persons house I’m delivering the same grill. They want me to throw away when I lift up the hood I don’t know how long this guy was cooking on that grill. I never seen so much burnt up stuff being. I was the assembly guy at Ace. Yes, I threw the girl away right to my house when I got done cleaning it better than the one I just delivered so I wound up with a free Weber, genesis grill and that was about 89 years ago and the girl still looks like it’s brand new

That chicken looks dry enough to sand a table. If this is the best grilled chicken you’ve ever made, I’d hate to see your worst. Sam might shoot in 4K, but that flavor looks strictly 240p.

The key to moist chicken is temperature. White meat is very sensitive to temperature while dark meat can go much higher without drying out. You can cook indirect on low heat for 40 minutes or smoke it and still have juicy chicken if you pull it at the right time. 165 is still a good temp but going much higher with white meat is going to quickly lead to dryness. Remember tbat 165 is just when the bacteria is killed instantly. At 160 the bacteria is killed after 15 seconds so yes, below 165 can still be safe even not considering carry-over cooking.

I clean my charcoal grill when I start up, just before cooking. When I am done cooking, I close in the air and vent and snuff the fire to save charcoal. And then I can pay attention to the food. This works for me.

Version 2: Improve on the grill plate to turn into pancake two plated clamp style handles, where it improves cooking time that makes it easier to flip the chicken sides. Version 1: Billion dollar insight. Medicine cum Culinary thesis. Need square grill plate (paired with Chinese round (for wok) gas stove) with wooden handle (business opportunity to sell). This will evenly heat or grill the teriyaki chicken cubes. Dice all chicken cubes to similar sizes so all will cook evenly at the same time to reduce (pivotal point) burning (cancer causing) of the ends or mini bits (smaller sized). The smaller ends and bits to keep aside to make soup. Improve on this.

You should use indirect heat or the chicken comes out tough and dry, like the ones you just cooked. Let them rest 10 minutes, also.
