To prevent potatoes from darkening let the diced potatoes sit in warm water + sugar dissolved for about 2-3minutes.. it’ll stay a perfect gold for just about however long you cook em

You can also microwave the diced potatoes for a couple of minutes. Otherwise you have to make sure the boiled potatoes are dry enough to throw into the hot oil.

You mentioned you like using avacado oil but you don't mention why. So i will:

When cookingo on stainless steel, on high heat, avacado oil is ideal since it has the HIGHEST smoke point. Meaning, you're kitchen (and possible you're entire living area) won't be smoked out when you cook on the stove.

Especially if youre like me and live in an apartment with little ventilation, a high smoke-point oil (avacado) is great.
