Rather than frying the chicken in oil have you tried using an air fryer? With the heat at max for 5 minutes either side the chicken comes out amazing.

Just made this for supper tonight. Oh My God! The flavour was intense, the chicken was tender, and the heat was just right (I reduced the chilli powder by half). I used chicken breast and it was delicious, however chicken thigh would likely have been nicer. This one is going into the recipe book. Our local favourite curry shop always asks if we want our order Indian hot or Canadian hot (New Brunswick, Canada), I would classify this as Indian medium. You may want to dial back the chilli powder. Another awesome recipe from Latifs Inspired!
Ingredients You'll Need:
- 500g boneless chicken thigh | Season with 1 tsp salt, 1 tsp Turmeric powder, 1 tsp Kashmiri chilli powder, 1 tbsp mustard oil
This is seriously good. I made it and it was delicious. I heated up the leftovers the next day and I thought it was even better. Maybe something to do with the spices developing overnight, I don’t know, but try this recipe! 🇨🇦

Fried onion (1 red onion) | Fried ginger (2 inch cubed)

Mr latif thank you so much for sharing your expertise. I made this today and it was perfect. Just a bit of background 35 years ago when I lived in London my Asian friends used to bring me to a Pakistani curry restaurant in Whitechapel called the new lahore. It was so delicious. Since moving to the West of Ireland 20 years ago I had given up on having a proper curry and I have tried many times to make it without success. But your recipe is absolutely spot on. I could have cried. The key is to use the ingredients exactly as you say ie kashmir chilli powder, mustard oil etc and not to be afraid to apply sufficient heat for the correct amount of time. Thankfully we have some great Asian shops in roscommon and all ingredients are readily available. Once again as a novice cook I thank you for giving us the benefit of your years of experience . It really is the best chicken curry ever!

Luckily we have all the ingredients and didn't have to substitute or go without - we may be the only people in our town who have kasoori methi and mustard oil!!
