The Centre continues cooking (carryover) and gets hotter, this is the same heat transferring inside.
Cooking protein itself does not need a very high temperature (about 60C) but cooking at lower temperatures takes a bit longer and should be done in a vacuum. Up to a lot longer if you don't start the cooking at a higher temperature, as higher temperatures thermodynamically move heat quicker
