This looks absolutely perfect except I wouldn’t add extra salt—the fish sauce and curry paste is already very salty. I also would swap coriander for cilantro! 😋

No matter what I do, my coconut curry always splits — and turns bright red like it’s angry at me 😅
Low heat, added the coconut milk in stages, stirred gently… still ends up looking like lava every time.

Just now made this recipe (super easy) and finished a bowl. Its some of the best Ive had! I "may" have put in a bit more red curry paste than necessary (had a good kick). This will be my go-to home curry recipe from now on.
