What about using oven, is it possible?
In Spain, this recipe is usually called arroz de marisco, while âpaellaâ traditionally refers to the Valencian version with chicken and rabbit. But outside of Spain, âseafood paellaâ is the name everyone knows â so today Iâll teach you how to cook it step by step, with all the tips to make it taste just like the ones by the Mediterranean.

Australian here: found this video by googling âarroz con seafoodâ đ€Łđ€Ł I didnât want to say con cosas.
I wish we had easier access to rabbit and snails here, but no - Australia âpaellaâ has chorizo and prawns.
This recipe looks fantastic regardless.
đ„ Recipe â Arroz de Marisco (Seafood Paella). Serves 4â6.
600 g bomba rice
1.8 L seafood fumet (stock)
4 cigalas (Norway lobsters)
Ahora un arroz negro por favor!!!!
12 shrimps
1 cuttlefish, cut into cubes
10 mussels
A handful of cockles
You made a storm out of a cup of water.
1 onion, finely diced
2 garlic cloves, finely diced
Hi! How big is the paella pan?
1 green bell pepper
1 red bell pepper
1 tbsp smoked paprika
3 tsp pimiento choricero paste
I don't care about pissing off Valencians
250 g shredded tomato
0.1 g saffron
I feel that the apologies to people from Valencia are tedious. I'm not talking about this video only. Many of the videos I've watched feature the same obsequiousness. It is very similar to the apologies heard in videos about whether you are allowed to put beans in a dish most of us call "chili". There is a lot of faux outrage -- "Texans don't put beans in chili!" But the dirty secret is that Texans do put beans in chili. There is a set of rules for Neapolitan pizza but there seems to be less outrage when someone refers to a pizza in that style as "Neapolitan" but with a variation. I can appreciate that the original version of these classic dishes had a particular set of ingredients and method of cooking, but I don't think anyone has to apologize for using the word "paella" or "chili" when they create a dish that is in the style of the traditional version without following all the so-called rules.
6 tbsp extra v olive oil
Salt

@YarushaTamang-i3rHola from South Africa! Once a year we visit our best friends who have a wonderful villa in Mallorca, away from the tourist crowds. They are great foodies and I learnt how to make seafood paella there, Mallorca style. It basically follows your recipe but chicken is also added a bit like your other recipe, and they add peas at the end which is great for colour and its gentle taste. I've never managed to get a rice crust in the pan. I however bought all the key ingredients from Spain and was blessed with 4 litres of the most amazing olive oil made from the trees on their estate. I once tried using Italian risotto rice - it's OK but I found it quite starchy. I've been talked into making paella for 17 people over Christmas. My hosts are keen fishermen and there will be fresh fish (whatever is caught) and there'll be lots of mussels. Rest I'll buy (prawns large and medium), calamari amd whatever else I can find in a store. I have 2 pans good for calamari. I'm terriffied because I believe I'll cook over open woodfire! temperature difficult to control. And I'll have a stick to prevent anyone stirring the paella, people are keen to help and paella is not commonly cooked here. Thanks for these posts, I have bookmarked both recipes! And am following your channel. BTW I prefer Spanish cuisine more than French... PS I've never toasted the saffron, going to try. I think I have enough.
@romeromoya6467just made this for my family! i wasn't able to find most of the ingredients since i'm in a desert part of the united states, but they all loved it from the ingredients i could find! the best part was that my grandfather, who has always had a bad sense of smell, said he loved how the sofrito smelled while i was cooking it, so thank you for giving me a recipe that could bring out the senses that i thought my loved ones didn't have anymore!
@Amangiechsinâ€â€â€â€â€
@animals_lovers_007Do Catalunyans get offended to call it arroz instead of paella, i wonder?
@RobertaandAlvinHomeCan we cook with fish stock?
@ceyhun8155Thanks for sharing! Going to try this tomorrow đ€
@0WoeiThanks for the video. I'm looking to buy a paella stand set. Which brand can you recommend? Which size would you recommend if you wish to able to serve 8 people?
@aimecoenders7745Looks good mate, and hello from russia.
Love the paella content. What kind of pan do you use? It looks like an enameled version. Is there a reason why you chose this instead of stainless steel or carbon steel? Thank!

@gustav4951Hi Chef, can you create another video for Mixta paella soon? Thx đđđđ
@DragonFruit-u4gFew questions from America, Chef :)
1) Are Lemon wedges and sweet peas not added to the seafood paella/arroz con mariscos?
2) Did you use homemade or boxed seafood broth?
3) Is Aoili âdotsâ appropriate for this paella?
4) what size papa was used?
5) is rosemary only for non seafood?
Good instructional and informative video. Hope to receive a reply soon. đđ
Looks so good! I might have to buy a paella pan
