Can anybody here tell me what size loaf pan he is using? 450 gr. of dough for a loaf is really low, and he can literally hold two of the loaf pans in one hand, they are not standare 1# pound pans (not that any of them are actually standardized, but they are all a lot bigger than the ones he is using.)

I followed this recipe and my dough was well mixed but not all that sticky. I followed your strengthening technique (so cool!) and seemed to build a very strong dough, but the end result was a dense bread. Can you talk about the flour you use and the resting periods you recommend?

So depressing to see how you master the dough... Dough with this moisture content scares the sh1t out of me, but you just tame it. Question: what flower do you use for this beautiful bread? Not just "patent flower" (ordinary supermarket white flower)
