Ingredients:

For the Pan-Seared Steak:

• 2 New York strip steak (or any cut)

• Salt (to taste)

• Black pepper (to taste)

• Cooking oil (algae oil, avocado oil, canola oil, or olive oil)

• 4-5 tablespoons unsalted butter

• 2–3 sprigs fresh rosemary or thyme

• 3-4 garlic cloves

For the Mashed Potatoes:

• 5-6 medium potatoes (cut into cubes)

• Salt (to taste)

• 4-5 tablespoons butter

• 1- 1/2 cups milk

For the Mushroom Cream Sauce:

• 2 cup sliced mushrooms

• 2 garlic cloves (chopped)

• 1 tablespoon olive oil

• Salt and black pepper (to taste)

• 1 cup heavy cream

• Fresh parsley (chopped, for garnish)

Directions:

1. Prepare the Steak

1. Take the steaks out of the fridge and let them sit at room temperature for 20–30 minutes.

2. Pat the steaks dry with a paper towel to ensure a good sear.

3. Season both sides generously with salt and black pepper.

4. Heat a pan over medium-high heat. Add a generous amount of cooking oil.

5. Once the pan is hot, place the steaks in the pan and sear for about 3 minutes on each side.

6. Sear the sides of the steaks as well for even browning.

7. Reduce the heat to low and add 4–5 tablespoons of butter, the rosemary or thyme, and whole garlic cloves.

8. Baste the steaks with the melted butter for 1–2 minutes until they reach your desired doneness:

 • Rare – 120°F

 • Medium Rare – 130°F

 • Medium – 140°F

 • Medium Well – 150°F

9. Rub the garlic over the steaks while basting for extra flavor.

10. Remove the steaks from the pan and let them rest for 5–10 minutes before serving.

2. Make the Mashed Potatoes

1. Cut the potatoes into cubes and place them in a pot with cold water.

2. Add salt to the water and boil the potatoes over medium-low heat for 25–30 minutes, or until fork-tender.

3. Drain the water completely, then add butter and milk to the potatoes.

4. Mash until smooth and creamy. Add more milk if needed to reach your desired consistency.

3. Prepare the Mushroom Cream Sauce

1. Heat olive oil in a pan over medium heat.

2. Add the sliced mushrooms and cook for about 5 minutes, stirring occasionally.

3. Add the chopped garlic, salt, and black pepper to taste. Cook for another minute.

4. Pour in the heavy cream and stir well.

5. Bring the sauce to a simmer, then reduce the heat to low and let it thicken for a few minutes.

6. Stir in the chopped parsley, cover the pan, and remove from heat.
