Not really a hack, but I cut my herbs with a pizza cutter. (This roll-blade thing). There's no easier way for me personally 😅

The easiest way to get the flesh out of an avacado is after you've pitted it, simply take a regular whisk, push it down into the fruit and twist. Then pull up the whisk. Your flesh is already sliced and diced, and you can then take it directly to your bowl. 😊

4:55 🥑 PSA: you can cut avocados like this, but i find it safer to slice it on top of a cutting board instead of your hand. You can also peel back the skin, or scoop out the avocado flesh whole with a large spoon, after which you’ll be able to place the avocado flesh flat-side down, making for easier cutting.
Saying this because I used to cut it the way she does here, but cut my hand good. The skin is very easy to pierce, and the knife can slip right through.

‣ Hasselback potatoes & creamy avocado sauce recipe:

1.5kg medium-sized floury potatoes
4 tbsp olive oil
The warm lighting and soft ambience create such a safe and nostalgic feeling. It feels like a rainy afternoon where you don’t have to go anywhere, just stay inside and enjoy the calm.
2 to 4 garlic cloves, sliced
Herbs of your choice (bay tree leaves, parsley, thyme, rosemary, basil...)
My garlic hack: I buy a bag of garlic at the market, peel then blitz with an equal amount of olive oil, put in a clean jar in the freezer. The oil never quite freezes, so you can take out a spoonful whenever you need it.
2 ripe avocados
Lemon (optional)
You make life warm
salt, pepper
Put each potato in-between two chopsticks, and cut through to the stick, taking care not to cut the potato all the way through to the board.
I cant watch her using the knife.... blade facing her artery when cutting the avocado and crushing the garlic.... please face the blade away from your wrist 😳😳
Place them in a plate or cooking tray and "slot" your bay leaves and minced garlic between each slice.
Toss in the rest of your herbs, olive oil, and season well. Roast for 50 mins – 1 hr until the potatoes are tender throughout and the tops are golden and crisp. Baste with any oil in the pan halfway cooking to get extra crisp potatoes.

In the meantime, mash the avocados to a purée (I like bits left over), add a few herbs, about 2 tbsp of olive oil, salt, pepper (and lemon if you'd like).
When the potatoes are cooked, spoon the avocado sauce over the top and serve immediately. The crispness of the potatoes combined with the creaminess of the avocado is heavenly!
I’ve never made hasselback potatoes has anyone made scalloped potatoes in jalapeno cream? They are so very east tio make and so delicious. Make to use the anehien type peppers, the aren’t so hot. I remove 90% of the seeds or you can do ALL of them when flavoring the milk. You’ll get the flavor with none of the heat. It’s quite a nice change. To save on calories I use whole milk or half and half instead of cream.
