Just a bit of an language police thing, lentil hummus isn’t the correct term, because in arabic “hummus” is chickpeas, and thats why hummus/chickpeas are literally hummus (the dish), so if you say “lentil hummus “you’re saying “ lentil chickpeas” as hummus is the ingredient and not the form of cooking/presentation

Growing up with Mexican immigrant parents I was exposed to the cheap brown lentils so I always had a bland connotation to the word. Now as an occasional vegan I've discovered the world of other lentils and a in love w red and black lentils. I've noticed the weeks I eat lentils my jeans fit better❤

Fabulous recipes. In the UK, we usually rinse red lentils till the water runs nearly clear before use. Ethan doesn't, I think—but maybe we don't need to! I mean, is that stuff that comes off the lentils a natural and harmless starch, or a dust of some kind? Anyone know?

You just ruined the tadka. A tadka is not supposed to be made with tomatoes and big onions. A tadka is using hot oil to extract the flavour molecules of spices like mustard, garlic, cumin, ginger, or even small shallots. The main component is fat from the oil. You really need to wash your lentils, also scoop off the foamy scum while you are cooking them. You'll have better tasting results if you soak your lentils for a couple of hours or preferably overnight.

@WriteSisterThe lentil pilaf is known as mujadara.
@babalu-oc6iutry making lentil tofu. Soak lentils overnight. Drain and blend with roughly double the weight of water to dry lentils you started with. Put in a pan over medium heat and stir until the mixture starts to form soft peaks. Then pour out into a flat tray and leave in the fridge to cool and solidify (if it don't solidify, you didn't cook it quite long enough). Then tip it out and cut up into cubes. Honestly really good, especially when fried a little before adding to soups or noodles or stir fries, so basically tofu. And they freeze well and cook fine from frozen so perfect for making in bulk

@melodioushasteOne thing my mom does to season lentils for daal is tossing a stock cube in the water she boils them in. Turns out insanely flavorful in the end.
