No Smoker? No Worries! Cook These American Style BBQ Pork Ribs with Ease!
Video Overview & Insights
I know not everyone has a smoker in their backyard, so here’s how I make American style BBQ pork ribs with a regular household oven. I’ve also whipped some cornbread, cabbage slaw and homemade BBQ sauce (because it wouldn’t be BBQ without them) and stick around until the end because I’ll tell you the best method for reheating your leftover ribs.
I do hate to correct someone as knowledgeable and professional like you, but it's needed here: baby back ribs and St. Louis style ribs are not as you described, but are from two different areas of the pig. When a pig is processed, the ribs are cut in half across the bones. The baby back ribs are from, as the name implies, the back of the pig. While spare ribs are cut from the belly side of the ribs, and St. Louis style ribs are then cut from the spare ribs. For this reason, baby back ribs are much leaner, while spare ribs/St. Louis style are more marbled. They have a much different flavor and texture profile than each other.

Andy! I made the ribs and cornbread for dinner, and it was a major hit! My 10 year old son helped make it, after watching this video with me. Thanks for the good food, and bonding moments 😊

Hi, is it ok to marinate the meat overnight first?

When i visited Texas i had ribs that made well you know a foodgasm, when I asked the secret, the guy said don't over cook them, when you bite into a rib it shouldn't fall apart but you should be able to see your teeth marks left in the meat. Best advice I got.
Recipe
Ingredients pork rub
Lost me at book
- 2 tbsp salt
- 2 tbsp brown sugar
I followed this to a tee with the sides as well. Thank you very much Andy, wife and I absolutely loved the slaw, ribs, and bbq sauce. Our corn bread didnt turn out loke yours, it was denser, crumbly and overall on the drier side.
Even still, great whole meal guide perfect for summer. Thanks again. Love from Canada 🇨🇦🇨🇦🇨🇦
- 1 tbsp smoked paprika
- 1 tbsp garlic powder
Andy I’m an avid follower from SA…but can’t find your book on the shelves, much to my great disappointment. Amazon doesn’t seem to allow SA customers to order the book either. So frustrating ‘cause I’d love to have your book to hand. You’re a genuine inspiration!
- 0.5 tbsp ground coriander
- 0.5 tbsp mustard powder
I don’t understand how you cook corn bread and the ribs at 2 different temperatures?
Most of us only have 1 oven.
Thx for the recipe but I’ll pass.
- 0.5 tbsp wattle seed (optional)
- 0.5 tbsp coarse black pepper
Perfect meal and cooked in the kitchen oven. Perfect with the cornbread and coleslaw and if I had one more, it would be baked beans.❤
Method
1. Mix everything well and set aside. *If you have leftovers, store them in an airtight container and place in your cupboard.
Good work great video and explanations.
Ingredients BBQ sauce
- 500g or 2 cups ketchup
So what would be the cooking time if u have thinner ribs the baby ribs one ?
- 180g or 1 cup brown sugar
- 120ml or 1/2 cup apple cider vinegar
I do the ribs your way except..i put butter squares on top of the ribs the butter infuses with the rub and comes out delicious also in the juices I use it for a gravy..great video
- 3 tbsp maple syrup
- 8 dashes Worcestershire sauce
I had never even considered making my own BBQ sauce before and this was a banger 🔥 💣 I added more smoked paprika, chili powder and cayenne for some heat. Would love to have some smoked salt on hand that sounds amazing! Thanks for this recipe here’s your sub 🎉
- 6 dashes Maggi seasoning
- 1 tsp smoked salt
Made this yesterday and am making it again today, this was awesome, thanks!
- 2 tsp garlic powder
- 1 tsp smoked paprika
I also add a little orange juice in my BBQ - I promise you wont regret it
Method
1. Place everything in a small pot over medium-low heat. Cook the sauce for about 20 minutes or until it just starts to thicken. *If you don't use it all, you can keep it in the fridge in an airtight container for up to 3 weeks.
What a rookie mistake you did there. You are not supposed to directly put vinegar on any aluminum. I hope you learned not to next time
Ingredients pork ribs
- Pork ribs, either St Louis or baby back. I did 4 x 1/2 racks of St Louis in this video and it was more than enough for 4 adults with some leftovers.
Bake or Fan Bake bro??
- BBQ rub (recipe above or your favourite store-bought one)
- 2 tbsp vinegar per rack (I used coconut, but apple cider works great)
This video caused my Siri to set a 2.5 hour timer 😂😂😂😂
- 2 tbsp bbq sauce to glaze per rack (use the above recipe or your own)
Method
Looks amazing Andy thank you
1. Start by preheating the oven to 160c (320f).
2. Remove the membrane from the back of the ribs, then drizzle with olive oil and rub all over. Cover the ribs in the rub and pat it in, making sure you cover all the ribs evenly.
What is a “saint louie” rib?
3. Place the ribs into foil and drizzle the vinegar over before tightly wrapping them up, with the main foil seam at the top.
4. Place onto an oven tray and cook for 2.5-3 hours, checking them at the 2.5-hour mark. You are looking for meat that is tender but still holding together.
Made the ribs Today barred a few ingredients. Eyeballed All the ingredients and surprising it still came out pretty tasty, fall off the bone. Thanks Andy. Been sharing your videos with quite a few mates.
5. Once cooked, carefully remove them from the oven and turn it up to 200c (400f).
6. Remove the ribs from the foil, placing them back onto an oven tray on top of the wire rack and liberally glazing them with the barbecue sauce. Place back into the hot oven for 15-20 minutes.
Andy, thank you very much for the recipes 🙌 ribs, are incredible
Ingredients Cornbread
- 400g of finely ground cornmeal
Mate this video has helped me cook ribs out of the oven that fall off the bone and taste amazing. Thankyou.
- 1 tsp of kosher salt
- 0.5 tsp of baking powder
Best ribs ever according to my 9 year old daughter, she also ate the coleslaw which was previously on her shit list. Thank you for making it easy to follow. Didn’t do the corn bread but will do next time as I have been informed that I need to cook them again. Cheers Andy😊.
- 0.5 tsp of baking soda
- 2 large eggs
baked spareribs (not st louis style) are my favorite actually. with a spicy rub
- 600ml of buttermilk
- 100g (½ cup) of lard
As someone who lives in an appartment, i have to say a basic "flavor smoker" is quite easy to make and will give that smokey taste easily. Ive been making ribs, jerky, scamorza, and many other smoked recipes for years that way.
Method
1. To start, add the lard to a skillet over medium heat (you are just looking to melt it at this point).
Ty Andy!
2. Whisk together the dry ingredients, and then in a separate bowl, whisk the buttermilk and eggs together.
3. Add the wet ingredients to the dry and whisk until combined. Then pour in half of the melted lard and whisk into the batter also. Leave the other 1/2 of the lard in the skillet and place it back onto medium-high heat.
6:37 Just as a precisation, cornmeal is the name of the flour. Polenta is the name of the result of cooking cornmeal in hot water or hot milk. In Italy, we also call cornmeal "flour for polenta"="farina per polenta". 👍🏻
4. Once the lard is hot (but not smoking), pour in the batter and use a spoon to press it so it fills the skillet evenly. Then place the whole skillet into a 220c (450f) oven for 20 minutes or until it's cooked through.
5. Let it rest for 10 minutes before you take it out of the cast iron pan.
Thanks for posting this. I've cooked many a rack of ribs on my charcoal grill but right now I'm stuck in an apartment without access to one, so this will be great One comment on your cook book though. It would be great if you could manage to publish an electronic version of it (Kindle or a PDF or something else). My eyesight is getting worse every year and I really can't use a hard-copy book anymore. I need to be able to read the text online and adjust the type size to something more readable. I do appreciate that you put the full recipe in the description of your videos.
Ingredients Slaw
- 120g or 1/2 cup mayonnaise
As an apartment dweller with no smoker and no grill, I really appreciate videos like this so I can do the best I can with what I've got. The ribs I made using this information were amazing!
- 2 tbsp apple cider vinegar
- 1 tbsp mustard
- salt and pepper to taste
- 1/4 head red cabbage, sliced very thin
Thank you for this Mr Andy. Helps me get good ribs any time I cook them.
- 1/4 head white cabbage, sliced very thin
- 1 large carrot, sliced into small matchsticks
Did anybody else’s iPhone set a timer aswell 😂
- 1 red onion, sliced very thin
- small bunch parsley, sliced thin
so what does the vinegar do to the ribs?
Method
1. Mix together all the dressing ingredients in a large bowl
The more time you put it into the oven with the sauce the less tender it gets, so be careful, dont overcook it.
2. Add the veggies to the bowl and mix well with your hands.
Kapai te kai ..Tena related..mmmmtaste 😋❤

That isn't the same mom and dad when the show started.
@CathyDoherty-hr4mxComplete numnut. Vinegar reacts w' Alfoil. Aluminium is dangerous to brain tissue.
@presidentoxfordwhat setting do you use for the oven? I assume fan bake first and then when glazing use the broil function
@roryalbert2361I like the way you slip in the life hacks subliminally during your video, example corn meal = polenta,,,etc ! Great work man!!
@richardwilcox5988This is how you cook tasty delicious food
All those little tips and additions with the vinegar and butter to reheat, is the advice of a great professional chef!
Nz proud 👍
The length of the video is oddly satisfying….
@tomnold_AUT👍
@turboapfel6291Excellent!!! Next day if there are leftovers. Make sure to have some hoagies and a can of beer ready.
@TCLTV-c4zive made my ribs the same way for years.......
@bigmig67Best ribs EVER 🎉thank you
@zonarybakaoh my.. looks SO GOOD. Adding this recipe to my Christmas menu list! Thank you, Andy!
@wl4006While watching your rib short l pre-cut the ribs, then assembled and applied the rub. Afterwitch, l made the sauce. I failed to oil the ribs before rubbing the meat but figured they'd cook in their own oils.
Top notch chef you are.
