Great video but in defense of some of the scenes it was a 1 on 1 teaching moment

Marcus wasnt a trained pastry chef until Carmy gave him inspiration to start working on being better. His whole deal with the type of donut was the very start of him becoming a well trained professional. So I'm not sure why you had a problem with that portrayal.

While her knowledge was interesting and I enjoyed her commentary, her criticisms of The Bear felt...personal. Like, "Caviar doesn't excite me," or not liking the flavor combinations, or not thinking something looks pretty, that kitchen is too big for just 2 pastry chefs, etc., almost across the board it felt like what she didn't like with The Bear is NOT that it wasn't realistic, but that her menu or her kitchen would look different. Some stuff is fine, like her criticisms of a plate that supposedly took "12 people to prepare," all completely fair. But mostly it was, "I don't like that."

@melicmpThey never should have switched to fine dining at least not in that location they should have opened up a separate location. They just gentrified a local place and no having a little sandwich shop in the back doesn't change the fact that it used to be a communal space where locals could afford to eat. And hang out. And now it's literally priced them out from ever even entering the building

@Dh9292-rt9mb‘The English can’t cook’ is a disappointingly outdated generalisation, from someone who supposedly knows food. While traditional English desserts, for example, may not be ‘fine dining’ there is nothing wrong with how they taste. I’d take that over anything (plus it doesn’t mean they can’t be adapted to that world, as everything else is). Oh look, a burger, but it’s one bite!

I think that's sort of the point of Marcus in the early season. He wasn't a pastry chef. He came in from McDonald's to help Mike at The Beef, worked his way to bread and discovered a passion.
Sending him to Copenhagen to learn under Luca was his arc to actually becoming a pastry chef.

@latrinkaowens9:25 I think the thing that's weird about what she's saying here is that this dessert was literally designed by Courtney Storer and Curtis Duffy, who has 2 Michelin stars and a James Beard award. Saying "2/10, these flavors would never work and everything about this is bad" is wild. Even knocking the plating as not being realistic is wild.
@burritoomg35:00 She may be using the metate properly, but the resultant chocolate will be grainy with sugar. There is no way she would ever get to the point of being able to temper it. That type of Mexican chocolate is used for hot chocolate, mole publano, sweet tamales etc. It is not used to make fine smooth chocolate candies such as the Belgians, French and Swiss make.
