Warm water (maybe around 100-120F) and let it rest at least 20 minutes instead of 10 is what I was taught by my parents. The texture difference is subtle, but people that eat tortillas every single day (a lot of Mexicans lol) will notice!

I can vouch for the press. I have made flour tortillas for a few years now, always hand rolling which gets very old and takes time away from other critical prep like fajitas, quesa birria tocos, etc. Game changer and much easier with a good press. I bought a stainless press since it afforded thinner flour tortillas. I have wanted to try corn since the flour demolishes store bought cardboard and many restaurants, so we will see if these are better too... I also have a Blackstone, so it makes cooking them easy, including 16" flout tortillas I make for cheese crisps.

The other day while making tortillas, I noticed I'd left my pizza steel sitting across two of my gas burners. I decided to give it a try... Absolute game changer. If you own a pizza steel, do not sleep on its tortilla potential!!

Step 1. Scoop up two pounds of dried bent corn off of the stoop.
Step 2. Give to wife.
Done!

There we go, 1 puffed up! That was slightly thicker. Maybe I was going too thin. Used more water with 2 heaping tablespoons of flour hoping easier to work with. Not sticky. Trying just set this time and fry in a little oil for Nachos see if it soaks less oil that way.

Took a few times. Think I almost got it now. I like the fact that if doing it fast, don't have to be careful and cook in the right oil so it turns out like Tostitos. The flavor comes right out. So like Nachos. Either way good. Just have to be careful they can soak up oil easily.

water first then add the flour, not the other way around, 1/2 of the needed masa by weight 60C water with a pinch of salt then slowly add flour until right, use reusable kevlar baking sheets for the press, the pan should be hot enough that water freely beads and dances on the surface, lay it slowly on the pan, 30 seconds first, flip 1 minute, flip again for 1 minute, after the last flip press it a bit and it will puff up. I found using a container to steam them leads to brittle tortillas that will fall apart once loaded, just put them on a wire wrack to cool, enjoy

Should have watched first. My first one was chips. I realized by the end of my first attempts that it's like making a grill cheese but with oil. Light oil right temp. Different tortilla than the hard tacos. Good, almost has that white Tostito's taste. A good alternative authentic taste.

I use 2 round reusable baking sheets for the tortilla-press and! transfer it to the pan! I can remouve it after 10 sec. So the dough must not necessaryly be perfect (ore sticky).

How hot should the pan be? No one except for Billy Parisi has mentioned how hot the pan should be and he said a “little more than medium high” heat.

You can put the cast iron press right on a gas stove and press and cook right in the cast iron press

WHY? Does everyone use a $20 press? I can buy about $300 worth of Corn Tortillas at Wall mart for JUST that price? I'm willing to hand roll them at a 1000th of the price less? :( This is frustrating, searching for homemade Corn Tortillas.

Having a spray bottle with clean water is one of my favorite cooking hacks. Keep it in your fridge and use it to revitalize and rebalance things while cooking. You only touched on this secret during this video, but hopefully others will get enough from it to play with this idea and realize its power for themselves

One of the highlights of my culinary career was when I started out my chef was Mexican. He had one of his family members, I believe it was his Tia Christina come in for an event with her tortilla press. She taught me how to make tortillas. It was a very cool experience to have a genuine Mexican Tia show me with such great patience. I learned a lot working there. Country clubs are great places to learn for anybody who is thinking about cooking. It's a tough environment, but you're well paid. And they know what they're talking about. You'll learn a lot. But yeah, it was very cool.

Thank you for teaching me to make corn tortillas. Our car is out of commission leading up to The Big Storm and we weren’t able to get any bread or half-and-half before the shelves were cleared out. But I still have 2/3 of a bag of masa so this weekend will be showtime for my new skill.
