Hey Nick, bakery owner and teacher of all things cake here. If you're reverse creaming, you need to add in some liquid and beat for a while to allow a little gluten to form. Then add in the final amount of liquid and mix for a shorter time. There should be no lumps at all, and the batter should be homogenised. Love your work btw x
