@JorgeMorales-gx5itOnly because the depth is interesting - starch browning is not the maillard reaction. Maillard requires protein - more akin to meat than the bread on a grilled cheese.

@SnailienzGordon Ramsey takes ages to cook scrambled eggs. He cooks on low and actually removes them from the heat and scrambles, and puts them back on multiple times
