a lot of the techniques are repeats. Like, infusing oils, syrup and alcohol are basically the same technique. I personally think the main focus should’ve been more about the layers. But it’s okay as a basic video.

First off I want to thank you for producing these videos.

Until today I thought happiness would never land on my doorstep when it came to learning to make food that could taste good. I had almost lost hope. Seriously my food has been tasting like nursing home food flavor for years. I could go to a friends house or family members house and still just assumed I could not cook period. That it was not a gift I was given. But because of you I can now have hope again that if I try some of these ideas that I will blow the roof off the house with flavor. Gosh big hugs guys. Thanks so much. Hubby will be real happy. He doesn’t complain about the food but it needed light shed on it. Thanks for this. Best to you both.

Traditional cooking, where I grew up in the mid-west, they are quite bland, in regards to spice use. Having moved around, traveled throughout the USA, and eating different foods from different cultures, I have discovered that I prefer spicy, flavorful, herb infused dishes.

I am Asthmatic so I use allspice, cinnamon, hug cumin for chicken & fish. I’ve steered away from processed salt & sugar. I had to replace my sealer.
My Grandmother and sister are excellent cooks. My sister hand grinds spices. Spices only open up with heat. Also Fennel and clove compliment meat if you cook low and slow. Rice opens up when you add the spice then a water or broth. I feel like a Chemist! Lol 😂

LOVE! Excellent program.
I have seriously considered opening my own Spice shop.
Years ago Spices were the wealth of the world. Spice merchants travelled across dangerous seas to bring spices from port to port.
Say a woman is preparing to go to a formal function... She chooses an elegant gown,shoes,has her hair & make up done.... Spices are like the embellishments of the jewels she chooses to compliment & add the finishing touches.

11:38, The nerd in me wants to correct you; it's not an infusion, it's a decoction. An infusion is when the liquid is brought to a boil, ingredients are added, and the liquid is taken off of the heat entirely and allowed to steep (think making tea). A decoction is when you continue to boil/simmer the liquid as the ingredients soak. I know it seems like splitting hairs, but it actually does change the properties in the final product in various cases, especially when making natural medicines.

A blend I like to make for grilled chicken is homemade dehydrated lemon peel, dehydrated onion, dehydrated garlic, ground in a mortar and pestle with some black peppercorns, sea salt, cinnamon, and home-grown freshly dehydrated basil. Coat the chicken with olive oil, and rub in the blend. Grill breasts for about 7 minutes each side. Freaking delicious! I can't tell you how much of each ingredient, because I don't know; I just eyeball it after years of experimenting.

Learned heaps, wonderful spices ... but awfully heavy on the oil. Personally, I'll ignore the lamb and ditch the oil. Nice products and info!

Spice really has a marketing issue. I stayed away from spice because everyone would say Spicy food is Burns your mouth, you need to be brave when eating Spice then I found out spice has different flavours, some I like, some I don't. People mistake spice for hot Chilli pepper and it causes people to think all spice is hot.
Yeah, people NEED to stop doing that!

Really dig this presentation but just have to say that 6-mo for a spice shelf life is ridiculous, especially if you're buying them whole to grind or use as you see fit (which, as was mentioned, you should be). That's a fine time limit for ground or pre-ground spices/herb, but whole spices will last literally years. I only mention this because this advice came from someone selling spices. Just saying. Everything else here is fantastic.

I can't speak about the quality of Burlapandbarrel's products for the price, but I can confirm this white boy definitely knows what he's talking about. Bringing good generally very obscure for westerners knowledge to the table, and makes the audience think critically about spices and how to store/use them
