On August 29 2016 Rumors hit the internet stating that Colonel Sanders' secret recipe was accidentally revealed. A sheet of paper with the hand written ingredients are supposedly Colonel Sanders' secret herbs and spices. Fact or fiction, I don't know but as Chef, I thought I'd do the taste test. See for yourself how to make what I feel is if not the original, the closest recipe ever. It's finger Lickin good.
Excuse the chewing sounds, but when tasting complex flavours you need to open your mouth to let in the oxygen. My mother wouldn't be proud but my old Chef School science teacher would. Same with wine tasting, you need to slur and let in the oxygen. Try it and see for yoursel, but please not in public. :)

Little tips
This recipe seems a lot stronger in flavour than the real KFC (see video above). You can always add an additional cup of flour or two to the mix bringing it closer to the real deal. I personally prefer it stronger, as per this recipe. Seems more like the old fashion KFC recipe. Try it first on a few fried chicken pieces, if it's too strong, it's always easier to add the additional flour to the mix later.
Your recipe has to be 1000% better
Also if you marinate your chicken with a little salt and butter milk overnight, you will get a juicier and more tender meat.
Some suggest that MSG is added to the original recipe and that could be the missing ingredient, I'm not a fan of MSG, I prefer to go without, but it's another ingredient that may bring it closer to the original. MSG enhances flavours.

Cooking it in a pressure cooker will also cook it faster giving you a less dark outer coating the way KFC does it, however I don't recommend it as hot oil under pressure is quite dangerous!!! KFC had special pressure cookers designed specifically for that purpose. That's why it's best to use smaller chickens, as large chickens will need to cook much longer making the outer crust too dark.
Either way, home made fried chicken beats any takeout chicken! ENJOY! :)
KFC's taste is different nowadays, it's way too salty and smaller size.

It sounds great, but I was under the impression that KFC boil the chicken pieces first then coat and fry! I believe itโs process to get rid of the unpleasant taste and smell? Please correct me on this. Thanks a bunch ๐๐ท

When the โno saturated fatsโ movement started the KFC chicken became blander and their famous gravy flavour was destroyed. I could drink the stuff honestly and now Iโd rather not dip it in their gravy anymore. Itโs just so watery, flavourless and gross and doesnโt even coat anything you dip in it, just sliding off and โwettingโ your fries. Itโs disgusting. They need to go back to the original recipes. Especially the gravy.

After not visiting KFC for years we decided to buy a bucket . Somewhere along the line this franchise lost something that was great because what I experienced was very underwhelming and disappointing. I donโt anticipate ever going back. We find Popeyes to be much better and very consistent in flavor and crispness.

@MrShagiFpvHi Recipe30. KFC used a Pressure Fryer. It keeps the Chicken moist and all the flavour the inside. Right timing and a strange technique. Colonel Sanders chose the number 7 and not 4 or 10 because that is just right for him. Not too little mixture and not over doing the flour mixture either. For the Chicken Thigh, Drumstick, Breast and Wing, the right oils for fried chicken and 11 Herb and Spices.
The best oils for frying chicken are those with a high smoke point, so they can reach a high temperature without burning:
ยท Canola oil: A neutral-flavoured oil with a high smoke point that won't alter the chicken's flavour. The only oil I know for frying chicken.
ยท Vegetable shortening: A solid fat that's commonly used for frying
ยท Peanut oil: A good option for frying. The oil you have on your recipe. Maybe that's why. The fried chicken has Peanut flavour.
ยท Safflower oil: A good option for frying
ยท Soybean oil: A good option for frying
ยท Grapeseed oil: A good option for frying
ยท Algae oil: Has a high smoke point and neutral flavour.
Oils with a low smoke point, like butter, extra virgin olive oil, flaxseed oil, and unrefined sesame oil, should be avoided for frying. Less refined oils also have a shorter lifespan and can go rancid at room temperature.

@Fredica-j3dKFC mixed a 25 lb bag of plain flour with a 3lb box of flour salt and a 24 oz bag of the secret herbs and spices. Mix flour THOROUGHLY. Original was breaded once. Spicy crispy/ extra crispy was double breaded.. it was breaded, dipped in a milk and egg wash ( watery solution not thick batter) , shaken to remove excess wash and breaded again. Worked there from 82-94. Chicken fried at 375 for 13 minutes And add two minutes to drain excess shortening . Know all ingredients from slaw. I used to make 100- 150lbs a day. Biscuits were best when rolled fresh instead of frozen box biscuit they use now. used to
Rolled over a thousand of those daily as well. Shortening was 59 lb cube of VEGETABLE Shortening. I agree with all the ingredients used but your slightly off. Salt was in a box separate from 11 herbs pack. So say the 11 ingredient was MSG. THAT YUM YUM. NOT SALT. THAT WOULD BE 12 AND THE BAG ONLY HAD 11๐๐๐ GOOD LUCK. NOW I DONT KNOW THE EXACT MEASUREMENTS OF THE INDIVIDUAL AMOUNTS OF SEASONING OF EACH. BUT I DO KNOW THEY WEIGHED 24 oz. For that 25lb bag of PLAIN flour. Let me know how it turns out

@vilmabock478Its never going to be exact, unless you have the same type of pressure cooker. That makes a ton of difference in the end result.
And no, kfc does not taste the same as it used to, at least it doesnt here in canada. It is more bland. The government decided it needed to tell us what we could or could not eat, so they mandated exclusions. I believe what is missing now is probably msg, whichz would have given it that extra something that it now lacks. Even the gravey is tasteless. Apparently kfc is much tastier in the US because they still get to make it the old way.
I found a copycat of Popeyes chicken sandwich whichnis bang on. The recipie stresses that you must use msg otherise it just wont be right. For those that gasp at the thought of using msg because it is not healthy, I mean you are making FRIED chicken.

@it1988aMaybe KFC does not add milk to the beaten eggs in its Fried Chicken since it is commercially made. Yours definitely tastes better since any food that you add milk to, will definitely taste umami.

It tastes less fatty, more flavoursome, uses less oil and has my secret blend of 14 delicate herbs and spices. @theraconteurproductions5847The reason it doesn't taste exactly like KFC, is because 99% of the fast food restaurants . Their SECRET INGREDIENT IS MSG DUHHHH !!!!! When you see NATURAL FLAVORINGS on ingredients labels. They're are saying " we use MSG but don't want to spell it out literally ๐๐
@AndyRooney2001Additionally, KFC is cooked in pressurised pots which does affect the texture and taste. The salt has been reduced from the original recipe to make it more healthy (seemingly), the same was as they changed the name from Kentucky Fried Chicken to KFC (initials really) so as not to make it obvious it was deep fried (too many fat people I suppose).
MSG just like salt enhances flavours and the chinese use it extensively, but it does tend to trigger headache and migraine in some people. I try and keep away from food with MSG as I think our food is already saturated with chemicals anyway.
I had a friend that worked in KFC and occasionally used to bring me a bag of the mix so I could make it at home.
I load extra spices after ordering KFC, more black pepper, salt, garlic & onion powder, it really makes KFC chicken taste much better vs depending on their cooks to spice it to my liking, I always get Orginal
@zenwhitenoise7920If the teeny-bopper cooks who breaded your KFC were being normal lazy teenagers, there's a good chance that your bought batch of KFC was breaded in mostly flour. They are SUPPOSED to re-sift the breading mix every 3 batch's or every hour, which ever comes first. Thats is probably why it tastes bland.

@KingOrr06I've tried this recipe (I'm in the UK) and as you say, it is pretty good, not the same as KFC (I actually find KFC UK a bit greasy, but not a big deal) I think this recipe actually makes a better tasting chicken all round, as you seem to have found. I like that much that I have a container of the spice mix in my cupboard for when I fancy fried chicken. ๐
