Wow, how did I never find this YT channel before today? Love the vids content and also theatrics…very entertaining while extremely informative. Being an Austinite, and having a couple of guys I follow from @JoshuaWeissman and @LeRoyandLewisBBQ included in this taste test…I was surprised you didn’t also include Brad from @ChudsBbq, the latter is equally an impressive BBQ’er on YT. Maybe next time you are in Austin or do another BBQ vid have him on…his bbq knowledge is right up there with the best of the best.

There are no such things as baked ribs. Meat cooked in the oven is Roasted.

I made these ribs a few months ago and they turned out very well, especially for relatively easy oven ribs without having to rev up the smoker! I didn't have the smoked salt then, but I do now (and a bottle of everclear in the freezer) so next time I'll add that step. I don't think I can justify getting a smoking gun just for this recipe, but maybe some day!

It just sounds like too much of a pain in the ass. I’d rather just use a smoker. If you have an apartment and can’t, them’s the brakes. That’s just the way it is. Part of the deal. It should help motivate you to get yourself into a house. There are perks, smoking your meat outside in your yard among them.

Hoping to make a smoked brisket gyudon and, in particular, I'm hoping that I can get a bark so smoky that I can use it to flavor a dashi sauce. This video gave me a lot of things I could try, but I really just want to ask if you think what I want is even possible or does barbecue just not work that way?

I have pulled a stunt similar to this for decades - I call it "Cheatin' Ribs". What I do is cut a rack of St Louis ribs in half, hit them hard with a dry rub (Dixie Drippins is my current favorite, along with a touch of Sure Shot Sid's Gunpowder seasoning). I then stack them onto each other and wrap them in a couple of layers of heavy aluminum foil, with the crimp at the top so the juices stay inside. Bake at 200 degrees for 2 to 2 1/2 hours. Unwrap carefully and transfer juices to a bowl. Finish outside on the grill over hickory wood. Establish good char, basting frequently with the juices from the ribs. When you hit this recipe just right, it's difficult to tell these ribs weren't smoked a whole day. 🐖

I rate your ribs a 4. I know what they taste like just by looking at them... right out of a cryo pack at Costco? Chefs Store? RD? You need to make friends with a hog farmer to blow me away. "Some of the best BBQ in the state" (of Washington) ain't sayin' much.
