Fun day! I would recommend never heating bread/croissants in the microwave — they need the oven to get flaky and lovely! I am single, nut a few times a year, I wish I had a Costco membership.

Real talk, I LOVE the enchilada bake, and the only complaints I have about it are: 1) it is WAY too easy to eat half the damn pan in one sitting, and 2) it is legitimately 10-15 bucks more expensive than most other premade meals at costco.
