10/10, again and again, best bread recipe ever. I make it once or twice per week, with a few modifications like maple syrup and about 3/4 cup of wheat flour. After a while you get a feel for how much water And the consistency it should be. I’ve found the amount to change a little from winter to summer. Awesome bread. I still watch the video every time I make it for the music.

made my 6th. loaf :) :) 5-4-2026
1️⃣ 450g (15.87 oz / 3.75 cups) Bread Flour (Type 650)
2️⃣ 6g (½ tablespoon) Dry Yeast
What about the sugar to start yeast?
3️⃣ Mix flour and yeast with a whisk – no lumps!
4️⃣ Add 350ml (11.8 oz / 1.5 cups) water
No water bowl in the oven this time ?
I wish the bread would come out the same, WITHOUT the water bowl :)
Please let me know.
5️⃣ Add 8g salt (1 + ¼ teaspoons)
6️⃣ Mix everything – No kneading! No touching!
Why sometimes you are dissolving the yeast in water first, and other times you are mixing it with the flour.
Is there a difference please ? ...:)
7️⃣ Mix until no dry flour remains
8️⃣ Cover and let it rest at room temperature for 40 minutes
The oven alarm just went off...THE BREAD IS READY!!!! 👏👏 There I go, can't wait to try it with some butter 😋😋
9️⃣ Sprinkle flour over dough
🔟 Gently scrape the dough onto wax paper (don’t touch directly)
Can you shape it into a different shape? If a long shape would you shorten the time in the oven?
1️⃣1️⃣ Use the paper to transfer dough into your baking dish (I used a cake pan: 12 x 6)
1️⃣2️⃣ Let it rest covered for another 30 minutes
Will it work in an air fryer?
1️⃣3️⃣ Moisten the surface and sprinkle some more flour
1️⃣4️⃣ Bake at 210°C / 410°F for 30 minutes
I’ve made this a dozen times or more and it gets better every time! I’m not supposed to be eating white flour. So I atone with 3/4 cup of wheat flour. I also replace about 2 tbsp water with maple syrup. Awesome! 🙏🏼
✅ Result: Crispy on the outside, soft inside – with zero effort!

Warm water (95–110°F / 35–43°C) – Best for yeast-based doughs (bread, pizza, brioche). Warm water activates the yeast and helps the dough rise properly. Too hot will kill the yeast; too cold will slow it down.
Cold water – Best for flaky pastries (pie crust, croissants, puff pastry). Cold water keeps the fat (butter/shortening) solid, which creates those flaky layers.
Room temperature water – Works for pasta dough, flatbreads, or simple doughs that don't rely on yeast or flakiness.
