@Daniel-w6j8nWe are not locals, but we do love local content. We have traveled to Vegas many times over the years. And the way we do Vegas is much more away from the strip. These days. Targeted entertainment, food and what's new in the area. Home base is often the m resort, so Henderson is our neighborhood when we're there. Keep them coming.

@kt4ever02I stay at fontainebleau multiple times a year and it's kinda embarrassing how many times I've eaten at washing potato lol. Sometimes I go two times in one stay lol. The beef chow fun is my fav along with black bean spare rib.

Even the dishes that aren't to your liking, besides highlighting the negatives, you always leave your review in a positive note, knowing that the restaurant and it's chefs would never purposely provide food that is below expectations. This is why to me your food content and reviews are always a cut above the others. Thanks for another great video!
@gjp3863ok. that hargow is terrible. i'm not talking about the filling. i'm talking about the skin. this is honestly has the appearance of store bought hargow.
the wrapper is suppose to be (after it has cooled a touch) translucent. You can see the 'pinkness' of the shrimp filling. its thin and delicate without being gummy nor tearing. This is a thick piece of rice flour dough. The filling looks decent. I would not pay much for that in a yum chai restaurant.
the shumai which is the other staple to see how good dim chef chef is. umm is only slightly better. It looks to be a farce, not chopped which i would have expected at this price point.
the dim sum so far shows me its closer to ping pang pong. at golden corral (which.. isnt that good..) than it is to the tim ho wan in the palms. which is also just above par from where I am in.
also, those are not wonton wrappers. those are glutinous rice/tapioca flower wrappers for the hargow, and tomato thing. A wonton wrapper is the yellow thing you saw on the shumai.
you can see they are using good ingredients. tthe lotus wrap you can see the dried scallop. I think for that one its an execution error. It has been steamed too long, or sat in the steamer for too long. that look of the rice when you opened it. it shouldnt really be like that.
i see they chose to go with an older style of the baked char sui bao. with a cookie topper. looks ok.
the pan fried beef noodle. honestly looks pretty good. the noodles are separated, not clumping. Good colour. your comment about the beef; that would imply that they didnt marinate/velvet the beef well,, or at all. I think their wok station maybe their strongest.
My take away is "go for stuff that comes off the wok, dont get dim sum.. " or.. just dont go. go to chinatown.
Nice to see you back in your element at more of an upscale restaurant. The last few videos were a bit of a tough watch. It seemed like you were soldiering on through the experience, as my observation was those dining experiences were not on par with the usual level of dining environments where your true talents of food description and enjoyment shine, as they do in restaurants like these.

I’m in Vegas for the next couple of days and while I’m not at the Fontainebleau, I am all the way at the other end of the strip so I will be trying some of my Shin approved options down by the Mandalay Bay. I do plan to try washing potato when I stay at Fontainebleau though so thanks for a great review!

An interesting commentary for oriental dining enthusiasts, an informative video for those like me who only recognized General's Chicken on the menu and might want to to dive deeper into that experience. The fact that you can tell that ingredients are in house prepared is very encouraging. If you are trying something new, 3rd rate quality ruins your opinion and removes the desire to experiment further. Top quality makes you want to try other, new paths.
