How Yama Seafood Sells 8,000 Pounds of Tuna to NYC's Michelin-Starred Restaurants — Vendors
Video Overview & Insights
Yama Seafood is among NYC’s top vendors when it comes to albacore, bigeye, yellowfin, and bluefin tuna. Director Nobu Yamanashi and his team begin their days at 3 a.m., breaking down tuna from Spain, Mexico, and Japan. The tuna is then delivered to New York City restaurants like two Michelin-starred Daniel and three Michelin-starred Le Bernardin. There may even be a rare appearance of Japan's tuna king in this video, tuna-in to find out!
I like the video and they seem to do well. I have to disagree about frozen, it doesn't matter how you thaw it, once frozen it's never fresh. If you ever caught your own fish and ate it within an hour you know what I mean. Freezing just changes the moisture chemistry in anything.

Dude where I’m from tuna is $1 per kg lol😂
@Somalia91Great business practice. I personally don’t like sushi, so there is almost no chance I eat tuna since the fish doesn’t taste as good as salmon and other fish.
@thiskneegrowDefinitely top 🔝 Shelf 😉!! Great 😃 job!!
@leebarnes393I love this country, anyone can make it with the values he explained if they want it bad enough!

@faafafineartist@ 0:59 I thought he was gonna say:
"There's many different kinds of fish in the world, and tuna's definitely one of them".

@Chef_VDUBThis is a documentary of how humans did it wrong in the future. When you overfish these fish like we have been. Which requires farming like tuna and salmon and ESPECIALLY lobster.
For those who are going to comment on my comment. Just know that they used to feed lobster to prisoners and oysters because of them being "sea bugs" I understand the market but my example proves that the food industry is wasteful and a trend/hype. In a hundred to a 1000 years the industry will change if we as humans are around that long. Once the shortages of fossil fuels inevitably runs out we will kill and more likely go to war with each other over a resource but be mislead by politicians to invade another country..
Loyalty and honesty...The foundation for any successful relationship with everything in life

@one1cabalI started a Contracting Business 30 years ago, I had some serious health issues so I had to stop doing hard work so my Son along with my Wife Runs the Business together, when you spoke on your Father only wanting Loyal, Trust Worthy Workers I have been that way for years, it all started when I was a Fireman of 23 years I climb the ladder fairly easy because of being a Leader i guess they seen that in me so when I made the Final Rank as Chief Over all the Officers and Firefighters I had to weed my way through the Ranks because of the Trust Worthy thing is so important to me there has been many people let go because they were not Trust Worthy on every level from Showing up too being entrusted with Peoples Livelihood so I went through a whole lot of People in my Years as Chief Officer over all the Guys and a Few Women.
@Diddley-js6lfI love Sushi ! My Son loves it for Real like he would rather Eat Sushi then anything else. He turned me onto the Sushi back probably 15 years ago.
@Diddley-js6lfVery humble God bless
@brandondotson1997Yes you WILL see the difference between frozen and fresh. Lots of that tuna is pale.
@BRuserOsakaThe father did an amazing job with this one! Superb work ethic, integrity, honesty, passion! Let’s hope he trains a predecessor the way his father did him!
@drewjackson4073I have 0 idea how I got to this video. But I am SO IMPRESSED with the guy that just knows exactly what every type of resturant wants and plans it all out. That is something that is earned and is not easily done at that.
@devonowens3652IN MY VIEW
His father instilled in him the same “Old School” qualities that are keeping employees still working for them after 15 years.
I just got into learning about tuna. This guy is sitting on a gold mine. With import/export. Well done , amazing quality
@ElsenorAurelioThe man tapping the shells 🐚 was a legend
He is the shell whisperer
Wait a minute, man
Ayy, check this out, man (let him tell it)
It was this blind man right (man, check it, ayy), it was this blind man right (this fool right here)
He was feelin' his way down the street with his stick right, ayy (yeah)
He walked past this fish market, you know what I'm sayin'? (Fish market?)
He stopped he took a deep breath, he said
Whoa, good morning ladies, hahaha
When he mentioned each fish is different, I thought is that cus they're all wild caught and have no consistency to them as each fish is surviving on it's own. wonder how it would be if we will be able to raise them in farms, sooner rather than later i guess
@CzesinThat's a lot of Mercury
@HakWilliamsWOW! WHAT A AMAZING DISTRIBUTION METHOD.
@renerusso3332Atlantic salmon is garbo, fr.
@keithsimpson2150I love your father's ways
@earlalford7694"May not be the smartest guy in the room, but we will work harder. First one in and last one out". Should be the mantra of any business owner and employee. That's how you get it done!
@jrwhite7916Sushi is so overrated. Eating much rice with tasteless fish for 1000$
@montetanktankkiller700Wait, how did I get here?
