Dont forget to not OVER CONCH the chocolate... You loose the flavors, thats why single origin chocolates are best, cause different beans need to different times to conch...

It was practically magical how after hitting the beans with a hammer she got a big mess of nibs+husk and in the next scene all husk was completely gone.
