How To Make Taiwanese Beef Noodle Soup
Video Overview & Insights
Richard Ho of Ho Foods in NYC makes Taiwanese beef noodle soup, a dish he’s so passionate about, he devoted his restaurant to it.
Its always weird praising your own food..of course you'll say its good😝
Richard’s adoration for this complex dish and a lack of Taiwanese restaurants in New York City inspired him to perfect this beef noodle soup recipe, which requires building flavors with ingredients like ginger, goji berries, ginseng, cinnamon, licorice, a variety of soy bean pastes, fuji apples, rock sugar, and more. This fragrant soup also features braised beef shank and crunchy pickled mustard greens.

Ho Foods - inspired by the country of Taiwan. Taiwan is an incredible country, small in size but the people have huge hearts.

I was trying to recreate it. Is it supposed to taste similar to a lighter version of red braised meat? I didn’t Dunn goof there did I?
@fluffy3355I bought a femur bone at meat market to slow cook it in broth and it makes it even closer to home. 😃
@CMWCheungLove this soup❤❤
@cristinachaliandroi1369Ha regarding your comment about in America people are obsessed with it being tender...I was thinking about how I always wish the beef was more like fall-apart chunks of stewed beef, and when I make it, I would just change the cooking method a bit to make it more tender
@darling1045I made this, with Fuji apple, carrot, etc.
Was super yummy.
I used brisket because grocer was out of beef shank. Brisket has the tendon running through it too, so was perfect. I also added two oxtail bones to broth to add more unctuousness given the brisket vs shank. I did use Pixian doubanjiang bean paste - and also used tsp Gochujang korean bean paste too - since I could not locate these other bean pastes you cited in recipe. Also, I used Shaoxing cooking wine for my rice wine - since not specified in recipe. And I found pre-bagged pickled mustard greens - which were delicious. I make my own mustard greens next time. Thanks for sharing this. Makes me want to visit Taipei.
you couldn't find taiwanese food in NY - were you on fentanyl?
@georgekwong9294I wonder if I can get a reply to my question 😢. In the video, it looks like the chef adds 2 liters of water. But in the link, it says 6 liters of water which seems A LOT.
Does anybody know the truth??
I'm flying EVA airlines with a layover in TPE.. i want to get this at the airport.. any suggestions?
@brtecsonI feel like I could smell it while watching. Great video
@12jmcgee"moving to new york, i couldn't find any taiwanese food..."
i notice you couldn't even look at the camera while saying that, bro, theres nowhere in the world outside of taiwan with more taiwanese food than nyc. stop smoking crack and take the 7 to flushing.

@Ria-xl7kzYum
@MrsO2026Makes me miss my late auntie in Taiwan! She made the best and its such soul food <3
@80kaithe number of "kind of" in every other sentence in this video 🤣😭 so distracting
@wckpslI couldn’t find any Taiwanese food? In America, especially in NY??? Come on, it’s called Chinese food… 😒😒
@josealbertoramirezdelvalle387I have made this recipe exactly as written a few times now. It's delicious. My friends and family are raving about it and some have gone for a second bowl. Thank you for sharing your recipe!
@ThanaTurnerJust a heads up. The recipe describes 6 litres of water added to make the soup. Apart from being too much liquid for most home pots, I found it was way too diluted. Then I look back at this lovely recipe video and I’m not sure he adds anywhere near that amount… I’m think mint more like 3 litres next time for me!
@MrDanbarbsI made this and it’s so delicious. Also this guy is so hot. There’s something about a calm man in the kitchen who can make an amazing meal 😊
@bk6827This recipe looks good,easy to follow and I might make this some time this week. There is a Taiwanese Restaurant nearby that servis this dish but i didn’t enjoy it the last time i ordered.
@dennydenlim❤❤❤
@ladypiano3786Thanks for vid. Please also give information on the temperature/how much heat as you go along with your recipe. E.g., "cook for one hour" at high heat, medium heat, or low heat?
@googolpiTaiwanese food is far superior to Chinese food because in China, some dishes are allegedly cooked with gutter oil.
@TerrorBite76That looks incredible
@Dassy36this bowl of noodles will get you "loved", if you happen to be married to a Taiwanese woman.
@LastRODbenderIt's Fujian Beef Noodle Soup. Not Taiwan. Southeast Asian Hokkiens always find these "Taiwan" stuff cringe.
@上原恵太郎Star anise???? Not authentic
@spoon2kLol hating on tender meat is hilarious. 😂
@KiyoSantoslooks like it can rival vietnamese pho and bun bo hue...i know that broth is amazing
@metsrusI made this over the weekend and it was yummy. The mustard green I used was gai choy. The day before making beef noodle soup, I made udon noodles so used them for this dish. Thanks for the recipe. It was so much fun to make.
