Can you please explain one thing to me...we buy short grain or medium grain rice for the starch content, but then we wash the starch of before cooking. What's the logic behind that? Is there too much starch if the rice is not washed? What happens when you do not wash the rice?

I have a very helpful rice washing/straining bowl that works great so there’s less chance of too much water before cooking. Cooked a half recipe of the rice for a small sushi batch.
