I enjoyed learning something new today. 1. You chose to brine the chicken in water, salt and sugar, instead of the other culinary artists using Buttermilk and salt Brine for 2 - 4 hours. Iโm wondering how you would measure the quality of the Water Brine vs Buttermilk Brine as far as the taste, texture and chicken crispiness of each option?

@City_katDue to my very limited budget & insanely limited equipment, I sometimes joke that I'm in "America's Stress-Test Kitchen." That said, even with my limitations & adjustments, this came out great. Pretty much foolproof.

@marybotkin7297My only issue is that when you add the battered chicken to the hot oil, it sinks and sticks to the bottom my cast iron Dutch oven. Oil was at the right temperature. What am I doing wrong?
