I enjoyed learning something new today. 1. You chose to brine the chicken in water, salt and sugar, instead of the other culinary artists using Buttermilk and salt Brine for 2 - 4 hours. Iโ€™m wondering how you would measure the quality of the Water Brine vs Buttermilk Brine as far as the taste, texture and chicken crispiness of each option?

I just followed along and cooked this now and although the batter tasted delicious, half of the batter fell off. :(
And I swear I dried the chicken thoroughly!. So I dunno what I did wrong :/

How long do you keep the chicken in the 200ยฐ oven? What if you refrigerate it for a couple hours? Would you reheat it at 200ยฐ and for how long?

I just made this. I'm writing it down, for sure. I've never made a fried chicken that I liked enough to make again. This one came out fantastic though. I did use all the pepper too lol

That is a LOT of Cornstarch. I usually see 1 TBS Cornstarch per cup of Flour in recipes.

My only issue is that when you add the battered chicken to the hot oil, it sinks and sticks to the bottom my cast iron Dutch oven. Oil was at the right temperature. What am I doing wrong?
