This is how we make traditional Spanish paella — explained step by step, and in English. I’m a Spanish chef, and in this video I’ll show you how to make paella from scratch, just like we do back home.
You're a great presenter and it looks delicious.
I have made paellas for up to 100 people and I use different ingredients every time. Authentic Paella in Spain is NOT always about seafood.
The most important thing is to have fun and enjoy the process of cooking and watching your paella turn into one of the most delicious and popular dishes of Spain.
Paella was the food for the poor, so they added anything they could find.

If you’ve been looking for a real Spanish paella recipe in English, this is it. Perfect whether you’re making seafood paella, chicken and/or rabbit paella, or your own creative twist.

Recipe (Serves 6 – for a 60 cm paella pan):
* 600 g Valencian arroz redondo (This traditional Spanish rice can be tricky to find outside Spain, but good-quality arborio or carnaroli—used for risotto—are decent substitutes.)

* 1.8 kg stock or water (I use 3 parts liquid to 1 part rice, but this can vary depending on the type of rice and how much your pan evaporates.)
* 1.2 kg chicken thighs
Eso es paella valenciana, que es la más conocida. En cada lugar de España la hacen de manera distinta. Aciertas completamente cuando dices que se echa lo que hay, pero en mi vida la he visto con espárragos y mucho menos con coliflor. Hay paella aragonesa, alicantina, valenciana, etc. Te felicito, te ha quedado con muy buena pinta. LIKE.
* 5 artichokes, cut into quarters
* 0.7 g of saffron

* 300 g green beans
* 230 g grated or crushed tomato

I do have one comment: you mention in one place that you used chicken broth, but later you mention using chicken stock. Since stock is typically made from bones and broth from meat, which one would you recommend I use for this recipe?
* Fresh rosemary
* Salt, to taste (remember: your stock should taste slightly over-salted before adding the rice—it balances out perfectly once it's cooked.)

Arroz Bomba is very different to Arborio risotto rice. It is very low in Amylopectin so is not sticky and doesn't thicken the liquid.

Sorry but this recipe seems very over complicated and too long to me. How tough the squid must have been after so much cooking? A chef show recipe rather than something for everyone.

Esto es un canal de guiris para guiris , para empezar no es paella Española , es paella Valenciana ,. Te faltan ingredientes , conejo y el pollo se aprovecha entero , no solo muslos , te falto el garrofon y pon un poco mas de aceite de oliva para el softito pues la has hecho a la plancha y a la paella sarten debe ser de hierro y no esmaltada , sobra el concentrado de pimiento choricero , con el pimentón es suficiente por lo demas bien

@makingadjustmentsPaella is one of my all time favourite dishes, my nan migrated to England from Spain as a little girl and she would make us paella, she didn't make it traditional Valencian way, she would make it with chicken sometimes with rabbit and chorizo even though she told us it's not traditional, some places not even optional she just loved the smokey taste it gave. I'll have try it your way though, it looks really nice.

@joeyb2995Just tried this recipe and technique on a cadac in the uk in my conservatory…added chorizo at the start, used chicken thighs, Harissa, and peppers instead of beans and some prawns at the end. Absolutely delicious! XxX
