I tried it exactly as was described, and the eggs turned out scrambled 😑 I think you mean it should be on low heat, for sure.

Every other explainer I've read or watched says to not whisk the eggs, just stir them gently before putting the eggs in the pan so that they start runny, not thick like that. These just look wrong to me but I realise I'm not the expert so can anyone confirm or deny for me?

How do you make it so that you can fold the omelette twice? It doesn’t look bad with a half fold but I really would like it folded twice. Is there a different trick to get this done?

@KaleEmino02134In japan if you use teflon to cook you can't call yourself a chef and nobody will eat at your restaurant. Teflon is for mcdonalds and amateurs at home, not chefs !
@Hannari-f5yThis method is basically first turning the liquid into scrambled eggs and then pasting it back together into a solid disc.
The alternative method is to just let it sit and then lift the sides while tilting the pan to get the runny top to the pan contact.
I like to do 3 eggs and save One yolk to add at the end In the midle.It's not a Michelin thing but adds more to the the flavour. To me and more nutrition. Actually I do with 2 yolks but prefer to sugest with just One to try.
With no disrespect to all the Michelin chefs around the world 😅.
This is NOT the way to make a "classic" french omelette. It's an omelette though.
